On mornings when I want something that feels a little like a vacation in a glass, I always come back to this Pineapple Coconut Blue Spirulina Smoothie. It’s creamy, tropical, and bright with that dreamy lagoon-blue color from blue spirulina. It’s the kind of smoothie that makes you pause for a second before you even take a sip. 

If you’ve already made my Hawaiian Blue Spirulina Smoothie, you’ll know I’m a little obsessed with blue spirulina haha. This version just takes things in a creamier pineapple coconut direction.

I’ve always been a big smoothie person, but I love finding small twists that make them feel a bit more special, and in this one it’s the frozen green grapes that do exactly that. They add this subtle sweetness and icy texture that blends so beautifully with pineapple, coconut water, and banana, creating a smoothie that’s both refreshing and indulgent at the same time. It’s simple, vibrant, and just a little unexpected, in the best possible way.

  1. Start by adding the yogurt, pineapple, banana, coconut water, blue spirulina, grapes, and coconut into a blender.
  2. next, blend until completely smooth and creamy.
  3. Finally, swipe some yogurt into a chilled serving glass then pour that beautiful blue smoothie! (use a fun pineapple-shaped glass if you want full tropical fantasy mode).
  4. Then, top with a swirl of extra yogurt, a sprinkle of shredded coconut, and a lime wheel if you’re feeling fancy.

Blue spirulina is what gives this smoothie its stunning ocean-blue color,but don’t worry, it doesn’t taste fishy or overpowering at all!

Unlike regular green spiraling, It’s actually very mild, so it lets the pineapple, coconut, grapes and banana shine while just giving that “wow” color moment.

If summer could be poured into a glass, it would look a lot like this Apricot Mojito Recipe.

Made with sweet ripe apricots, fresh mint, zesty lime, white rum, and a splash of bubbly club soda, this refreshing cocktail is sunshine in a glass. It’s fruity, vibrant, and perfect for sipping on a warm afternoon.

This recipe is especially close to my heart because the apricots didn’t come from the grocery store, they came straight from a friend’s backyard tree. There’s something magical about picking fruit at the peak of apricot season and turning it into something delicious. The apricots were perfectly ripe, juicy, and practically begging to be muddled into a cocktail.

This isn’t the first time I’ve put those juicy summer apricots to good use. I also turned them into a refreshing APRICOT LEMONADE  that’s become one of my favorite warm-weather drinks. This time, though, I wanted something a little more grown-up, and this apricot mojito was the perfect answer.

If you’ve never made a mojito with fresh fruit before, you’re in for a treat. The apricots add natural sweetness and a gorgeous golden color while still allowing the classic mint and lime flavors to shine through.

Lightly sweet, slightly tangy, and finished with a sparkling soda water top, it’s the perfect way to replenish electrolytes while enjoying something that feels more like a spa-style refresher than a sports drink. Unlike store-bought electrolyte drinks, this version uses simple pantry ingredients and real fruit for a clean, naturally balanced hydration boost.

Ingredients

  • 1/3 cup Strawberry puree
  • 1/2 cup Coconut water
  • 1/2 cup Sparkling water
  • 1-2 tsp Fresh lemon juice
  • 1-2 tsp Raw honey
  • tiny pinch Celtic sea salt

Instructions

  • Begin by pureeing the strawberries in a blender and setting aside. (around 3 large strawberries)
  • Next, simply add the strawberry puree to a serving glass along with the lemon juice, honey and Celtic sea salt and stir to combine.
  • Fill the glass with ice and top with the coconut water followed by the sparkling water.
  • ENJOY!

  • 1.5 oz Golden Rum
  • 1 oz Pineapple juice

  • 1 Tbsp Rum soaked Golden Raisins
  • 0.5 oz Lime Juice approx half a lime juiced
  • sparkling water
  • 1 Fresh lime wheel for garnish
  • 1 tsp Dried pineapple chunks for garnish

Instructions

  • Let's Start by making the golden raisin rum! Simply place half a cup of golden raisins into a jar or bowl and add enough golden rum to submerge the raisins. Cover and allow to soak for at least 5 hours.
  • Drain the raisins from the rum and then Add 1 Tbsp of the reserved rum-soaked golden raisins to a cocktail shaker or sturdy glass. Gently muddle to release their sweet, rich flavor.
  • Next, add the golden raisin soaked rum, pineapple juice, fresh lime juice, and honey syrup. Add ice and shake well.
  • Finally, strain it into a glass filled with fresh ice. Top with sparkling water and gently stir to combine.
  • Then, Garnish with a lime wheel and dried pineapple slice before serving.

There are some recipes that are just fun… and then there are recipes that feel like a full-on experience and this Layered Rainbow Smoothie is definitely the second one!

It’s creamy, fruity, naturally vibrant, and completely made without food dye…just real fruit, vegetables, yogurt, and superfoods blended into the most beautiful Seven layered rainbow you’ve ever seen in a glass.

I made this for Pride Month originally, but honestly? It’s one of those recipes that deserves to live all year round. It’s equal parts breakfast, edible art, and a little moment of joy in a glass.

There are a few reasons this recipe has become one of my favorites:

  • It looks absolutely stunning but is surprisingly simple to make
  • It’s perfect for Pride Month, summer brunches, or just a fun kitchen project
  • And honestly… it just makes you happy looking at it

It’s one of those recipes that feels like a little celebration in itself.

Everything here is made with simple, real ingredients! You’re just building colors one layer at a time.

Yellow Yogurt Layer

  • Greek yogurt (or any yogurt you like)
  • Turmeric

 Pink Yogurt Layer

  • Yogurt
  • Strawberry powder

Blue Yogurt Layer

  • Yogurt
  • Blue spirulina

Green Smoothie Layer

  • Spinach

How to Make a Layered Rainbow Smoothie

Step 1: Prepare your yogurt colors

Start by mixing your three yogurt bases in separate bowls.

One bowl gets turmeric for that golden yellow.

One gets strawberry powder for a soft pink tone.

And the last gets blue spirulina for that dreamy blue layer.

Set them aside while you work on the smoothies.

Step 2: Blend your smoothie layers

Now blend each colour one at a time.

I like to do this in order just so I don’t confuse myself mid-blend (because once you start, it does feel a little like a rainbow science experiment).

Blend each until thick and creamy:

  • Green
  • Orange
  • Red
  • Purple

 TIP: Keep your smoothies on the thicker side—this is what helps the layers actually sit on top of each other instead of mixing together.

Step 3: Build your rainbow

This is the fun part.

Grab a tall clear glass and start layering slowly using a spoon.

Pour gently and take your time. This is where the “wow” effect happens.

You can build it in any order you like, but I usually go from darker to lighter for contrast or just follow whatever mood I’m in that day.

The key is: slow, gentle layering so each colour stays defined.

Step 4: Finish and serve

Once all your layers are in, you’ve got two options:

  • Leave it perfectly clean and structured for that bold rainbow stripe look
  • Or lightly swirl it for a softer “rainbow mosaic” effect

Either way, it’s one of those drinks you’ll definitely want to photograph before you touch it.

 Tips for Perfect Layers in this Layered Rainbow Smoothie

A few things I’ve learned while making this:

  • Thick smoothies = better layers (don’t overdo the almond milk)
  • Pour slowly over the back of a spoon if you can
  • Chill your yogurt layers slightly for cleaner separation
  • Use a clear glass so every colour shows properly

This recipe is super flexible, which is why I love it.

  • Make it dairy-free using coconut yogurt
  • Add protein powder for a more filling smoothie
  • Swap spinach for kale for a deeper green tone
  • Use acai or extra blueberries for a richer purple
  • Or even simplify it into a single blended rainbow smoothie if you want something quicker

Is this made with food dye?

No! Every single color comes from real fruit, vegetables, and superfoods.

Can I make it ahead of time?

It’s best fresh, but you can prep all your layers ahead and assemble just before serving.

Is it a smoothie or a drink?

It’s a layered smoothie. Thick, creamy, and built like a drinkable rainbow

Layered Rainbow Smoothie

A vibrant rainbow smoothie made with naturally colored fruit and vegetable layers, paired with beautifully tinted yogurts using spirulina, turmeric, and strawberry powder. A fun, creative, and nourishing smoothie made entirely from real ingredients and no artificial food dyes.
Prep Time 25 minutes
Total Time 25 minutes
Servings 3 large smoothies

Equipment

  • 1 blender or 4 separate blender cups ideally!
  • 3 mixing bowls

Ingredients

Yellow Yogurt

  • 3 Tbsp yogurt of choice
  • 1/8 tsp Turmeric add extra to reach the vibrant yellow you'd prefer

Green Smoothie

  • 1.5 cups Frozen Mango
  • 1 cup baby spinach
  • 1/4 avocado, diced, frozen
  • 3-4 Tbsp Yogurt of choice
  • splash of almond milk or milk of choice

Blue Yogurt

  • 3-4 Tbsp Yogurt of choice
  • 1/4 tsp Blue Spirulina Adjust to desired color

Purple Smoothie

  • 1 cup Frozen Blueberries
  • 1/2 banana, frozen
  • 4 Tbsp Yogurt of choice
  • splash of almond milk or milk of choice

Pink Yogurt

  • 3-4 Tbsp Yogurt of choice
  • 1 tsp Strawberry Powder adjust for desired color

Red Smoothie

  • 1 cup Frozen Raspberries
  • 4 Tbsp Yogurt of choice
  • splash of almond milk or milk of choice

Orange Smoothie

  • 1 cup Frozen Mango
  • 4 strawberries, frozen
  • 4 Tbsp yogurt of choice
  • splash of milk

Instructions

  • Divide yogurt into 3 small bowls.Mix in each of your fruit superfood powders. Stir until smooth and vibrant, then chill in the fridge.
  • Next let’s blend our smoothies! Add ingredients for each smoothie into a blender. Blend until smooth and creamy.Add extra milk or yogurt if needed to help blending.Transfer to separate containers and chill until ready to assemble.
  • In a chilled glass, carefully layer. Start with the yellow yogurt, then continue layering alternating:smoothies, yogurts to build your rainbow effect
  • Give a gentle swirl if desired, add a straw, and serve immediately for the best visual effect.

Notes

  • Use thick smoothies for cleaner layers (less runny = better definition)
  • Chill everything beforehand for sharper separation
  • Pour slowly over the back of a spoon for neater layers
  • Natural powders may vary in intensity so adjust slowly
