There are few things better than a warm, buttery biscuit straight from the oven, and these Cheddar Bay Swim Biscuits take that idea to an entirely new level.
They’re loaded with sharp cheddar, garlic, fresh parsley, and cold buttermilk, but the real magic happens in the baking dish. Instead of mixing butter into the biscuit dough, the dough is poured directly into a dish filled with melted butter, where it essentially “swims” as it bakes.
The result is ridiculously indulgent: golden, buttery edges, a tender and fluffy center, and rich cheddar flavor in every bite.
As soon as they come out of the oven, they’re brushed generously with a garlicky Cheddar Bay butter topping. Serve them warm alongside dinner, dip them in gravy or seasoned butter, or drizzle them with a little honey for the ultimate sweet-and-savory bite.
These aren’t your average homemade biscuits.
The dough comes together in one bowl with no rolling, cutting, or complicated biscuit-making technique. Once mixed, it’s simply poured into melted butter and baked.
As the biscuits bake, the butter works its way around the dough, creating beautifully golden, crisp edges while the centers stay soft and tender.
Swim biscuits are a simple style of homemade biscuit where the dough is placed directly into a baking dish filled with melted butter.
Rather than incorporating all of the butter into the dough, the biscuit mixture sits on top of the melted butter while it bakes. The butter surrounds the dough as it cooks, giving the finished biscuits their signature rich, buttery edges and tender centers.
This method is especially easy because there’s no need to roll out the dough or cut individual biscuits.
For this version, I’ve combined the swim biscuit method with the flavors of classic Cheddar Bay Biscuits. Sharp cheddar, garlic, buttermilk, and parsley make these incredibly flavorful, while the melted butter gives them that irresistible golden exterior.
I recommend freshly shredding your sharp cheddar for the best flavor and melt. You can use pre-shredded cheese in a pinch, but freshly grated cheddar tends to melt more smoothly.
Cold buttermilk gives these biscuits their tender texture and adds a subtle tang that works beautifully with the sharp cheddar.
There is a generous amount of butter in this recipe, and that’s exactly what makes swim biscuits so special.
One stick of melted butter goes directly into the baking dish before the biscuit dough is added. The dough then bakes directly in the butter, allowing the butter to surround the bottom and edges as the biscuits cook.
Additional melted butter is combined with garlic powder and parsley for brushing over the hot biscuits.
Garlic powder flavors the biscuit dough, while fresh parsley adds color and freshness. More garlic and parsley go into the finishing butter topping for that classic Cheddar Bay flavor.
Preheat your oven to 450°F (230°C).
In a large bowl, whisk together the flour, baking powder, granulated sugar, garlic powder, and salt.
Fold in the shredded sharp cheddar and fresh parsley until evenly distributed.
Pour in the cold buttermilk and gently stir until the dough just comes together.
Don’t overmix. A few small lumps are perfectly fine. Overmixing can make the biscuits dense rather than tender.
Melt one stick of unsalted butter in a microwave-safe bowl.
Pour the melted butter into a 9×9-inch baking dish, making sure it covers the bottom.
Pour the biscuit dough directly into the dish of melted butter.
Gently spread the dough into an even layer with a spatula.
The dough should sit on top of the melted butter rather than being mixed into it.
It may look wonderfully rustic and excessively buttery at this point. That’s exactly what you want.
Using a butter knife, lightly score the top of the dough into 9 squares.
You don’t need to cut all the way through. The lines simply make the biscuits easier to portion once they’re baked.
Bake for approximately 25 minutes, or until the top is golden brown and the edges are crisp.
You’ll see the butter bubbling around the biscuits as they bake. That’s the signature swim biscuit magic!
While the biscuits are still hot, whisk together the melted butter, garlic powder, and fresh parsley.
Brush the garlic butter generously over the entire surface of the biscuits.
Allow the biscuits to cool for a few minutes before slicing along the scored lines.
Serve warm and enjoy!
This is the little trick that makes swim biscuits so special.
Instead of adding all of the butter directly to the biscuit dough, the melted butter goes into the baking dish first. The biscuit dough is then placed directly on top.
As the biscuits bake, the butter surrounds the bottom and edges of the dough. This creates an incredibly rich, golden exterior while the center stays soft and tender.
The result is a biscuit that’s crisp and buttery around the edges without needing to roll, fold, or cut traditional biscuit dough.
It’s wonderfully indulgent, incredibly easy, and one of my favorite ways to make homemade biscuits.
Use cold buttermilk. Cold dairy helps keep the biscuit dough tender.
Don’t overmix. Stir just until the ingredients come together. Overworking the dough can lead to dense biscuits.
Freshly shred your cheddar. Freshly grated sharp cheddar melts beautifully and gives the biscuits plenty of flavor.
Use enough butter. The melted butter in the bottom of the baking dish is intentional. It’s what gives swim biscuits their signature buttery edges.
Don’t mix the butter into the dough. The dough should be placed directly on top of the melted butter so the biscuits can bake in it.
Score before baking. Lightly scoring the dough makes it much easier to cut the biscuits apart after baking.
Brush while hot. The garlic butter topping melts beautifully into the hot biscuits, giving them even more flavor.
These biscuits are an incredible side dish for so many meals.
They’re also delicious on their own with a little seasoned butter or honey for dipping.
For a sweet-and-savory combination, drizzle warm biscuits with honey and add a little extra flaky salt.
These biscuits are best served warm from the oven, but you can prepare the dough shortly before baking.
For the best texture, I recommend mixing the dough and baking the biscuits close to serving time.
Leftover biscuits can be stored in an airtight container and gently reheated in the oven or microwave.
Yes. Allow baked biscuits to cool completely, then wrap them well and place them in a freezer-safe container.
When you’re ready to enjoy them, reheat until warmed through. You can brush them with a little additional garlic butter after reheating to bring back some of that fresh-from-the-oven flavor.
If you love buttery, cheesy bread, these Cheddar Bay Swim Biscuits are going to be hard to resist.
They’re soft in the middle, golden and crisp around the edges, loaded with sharp cheddar, and finished with a garlicky butter topping.
And because the dough simply gets poured into melted butter, they’re incredibly easy to make, no rolling pin or biscuit cutter required.
Serve them alongside a cozy dinner, dunk them in gravy, or enjoy one warm with a drizzle of honey.
Sometimes the easiest side dish is the one that almost steals the show.
