I’m all about saving a dollar and when it comes to $20 dollar smoothies, I’m all about spending that money on making the smoothie at least 5 times! Without a doubt this Malibu Mango Smoothie is the trendiest smoothie out right now – honestly I didn’t even know that smoothies trend but here we are! This Erewhon smoothie is unreal delicious and outrageously priced and I for one am only going to try it once and then recreate it at home because thats wild! I decided to create a version that is a fraction of the cost, plant-based and may well be better than the original. 

My Copycat Erewhon Malibu Mango Smoothie has Lucious layers of the best vegan coconut whipped topping along with a strawberry puree glaze and the dreamiest, thick and a creamy mango smoothie base. This recipe tastes just as amazing as the original (if not better). Plus, making it at home means you can whip it up multiple times for the cost of one store-bought version. Instructions

  • Begin by simply blending approximately 4 large strawberries in a blender with a touch of water. This will be our strawberry glaze. Once blended, set it aside in the fridge
  • Next, add all smoothie ingredients into a blender and blend until silky smooth.
  • Grab a serving glass and begin layering. Start with a generous amount of whipped topping followed by the strawberry puree. The fill the glass half way with the mango smoothie and repeat the layers.
  • Finally top with extra whipped topping and strawberry puree. And enjoy!

Notes

  • I like to create extra strawberry puree to add to smoothies and oats throughout the week. So add as many strawberries to your blender as you’d like!
  • Use yogurt or coconut cream in place of the whipped topping for less sugar.

  • 2 tbsp maple syrup
  • 1 tsp fresh lemon zest

Instructions

  • Add 16oz of fresh lemonade to an ice cube tray and freeze overnight.
  • Once the lemonade is frozen. Add the cubes to a high speed blender, followed by the maple syrup, coconut milk, yogurt and lemon zest and blend until thick, smooth and creamy.
  • Pour into serving glasses and garnish with a slice of fresh lemon.
  • Enjoy!

Notes

  • Use any yogurt you'd like, I find Greek yogurt is best for this recipe!
  • For extra creaminess substitute coconut milk for coconut cream.

Ingredients

  • ⅓ cup walnuts + extra for garnish
  • 16 oz can coconut milk frozen into cubes
  • ½ tsp vanilla extract

  • ½ cup plant milk of choice

Instructions

  • Ahead of time, pour the coconut milk into an ice cube tray and allow to freeze overnight.
  • Once the coconut milk cubes are frozen, let’s Begin by chilling serving glass(es) in either the fridge or freezer to prevent the frosty from melting once serving.
  • Then, into a high speed blender, add all ingredients and blend until silky smooth.
  • Remove the glass(es) from the fridge or freezer and pour generously.

Notes

  • For an extra creamy texture, you can use coconut cream.
  • Try this recipe with your favorite choice of nuts: cashews, pecans, or macadamia nuts would work perfectly.
  • Top with extra walnuts or whatever you desire 🙂

Ingredients

  • 11 oz vanilla soy milk frozen into ice cubes
  • ½ a large avocado
  • ½ cup coconut cream
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup or sweetener of choice
  • 1 tsp pure vanilla extract
  • pinch of salt
  • 1-2 tbsp cashew butter or nut butter of choice
  • cacao nibs for serving optional
  • 1 scoop chocolate protein powder optional

Instructions

  • Prepare your soy milk ice cubes the night before. Simply pour 11 oz of soy milk into a silicone ice cube tray and leave in the freezer to set overnight.
  • Once the cubes are set, simply add all ingredients into a high speed blender and blend until thick and creamy and thoroughly combined
  • Pour into a serving glass(es) and top with crunchy and nutty cacao nibs.

Notes

**I used a rich and creamy vanilla soy milk for this recipe. It adds a boost of protein and beautiful flavor. You can substitute for plant milk of choice. I’d recommend cashew or oat milk to give the same creamy texture.
** for an added protein boost feel free to add a scoop of your favorite chocolate protein powder. I love OWYN plantbased protein powder. Discount available in my shop.
