This Copycat Erewhon Malibu Mango Smoothie is a creamy, dreamy treat that combines tropical mango and pineapple with luscious layers of coconut whipped topping and strawberry purée. It’s a plant-based, budget-friendly version of the $20 celebrity-inspired Erewhon smoothie.
Begin by simply blending approximately 4 large strawberries in a blender with a touch of water. This will be our strawberry glaze. Once blended, set it aside in the fridge
Next, add all smoothie ingredients into a blender and blend until silky smooth.
Grab a serving glass and begin layering. Start with a generous amount of whipped topping followed by the strawberry puree. The fill the glass half way with the mango smoothie and repeat the layers.
Finally top with extra whipped topping and strawberry puree. And enjoy!
Notes
I like to create extra strawberry puree to add to smoothies and oats throughout the week. So add as many strawberries to your blender as you’d like!
Use yogurt or coconut cream in place of the whipped topping for less sugar.
