Without a doubt this Malibu Mango Smoothie is the trendiest smoothie out right now – honestly I didn’t even know that smoothies trend but here we are! This Erewhon smoothie is unreal delicious and outrageously priced and I for one am only going to try it once and then recreate it at home because thats wild! I decided to create a version that is a fraction of the cost, plant-based and may well be better than the original. 

My Copycat Erewhon Malibu Mango Smoothie has Lucious layers of the best vegan coconut whipped topping along with a strawberry puree glaze and the dreamiest, thick and a creamy mango smoothie base. This recipe tastes just as amazing as the original (if not better). Plus, making it at home means you can whip it up multiple times for the cost of one store-bought version. Equipment

  • blender

Ingredients
  

  • ½ cup Coconut water
  • ½ cup Orange juice
  • cup Mango
  • ½ cup Pineapple
  • 1 tbsp Maple syrup
  • 1 tsp Mushroom powder
  • ¼ cup Banana

Layer Ingredients

  • coconut whipped topping
  • Puréed strawberries
  • Coconut flakes optional

Instructions
 

  • Begin by simply blending approximately 4 large strawberries in a blender with a touch of water. This will be our strawberry glaze. Once blended, set it aside in the fridge
  • Next, add all smoothie ingredients into a blender and blend until silky smooth.
  • Grab a serving glass and begin layering. Start with a generous amount of whipped topping followed by the strawberry puree. The fill the glass half way with the mango smoothie and repeat the layers.
  • Finally top with extra whipped topping and strawberry puree. And enjoy!

Notes

  • I like to create extra strawberry puree to add to smoothies and oats throughout the week. So add as many strawberries to your blender as you’d like!
  • Use yogurt or coconut cream in place of the whipped topping for less sugar.
