
Growing up if a cookie was vegan it was probably coming out of some hippie dippie shop by the coast and strictly made out of nuts and seeds; and while that’s not a bad thing; we’ve come a long way my friends and now you can have inclusive vegan baked goods without even knowing they are vegan. What does a vegan cookie even taste like? I’ll tell you, it tastes the exact same but it’s made with more wholesome ingredients, it’s probably healthier and it can be made into fun colours with NATURAL ingredients! Today we are baking without boundaries and making these absolutely delicious Vegan Pink Sugar Cookies. These cookies are not just a treat for your taste buds but also a feast for your eyes!
Traditional sugar cookies often contain dairy products like butter and milk. However, my vegan version uses plant-based alternatives to ensure they are dairy-free and just as delicious. I bet you’ll be able to fool anyone you give this cookie to! They are much more inclusive and if you require nut free; you can swap the almond milk for soy or oat and omit the almond extract completely.
Who doesn’t love a cookie that looks as cute as it tastes delicious? My sugar cookie recipe is made with simple, vegan-friendly ingredients and the instructions to make it are incredibly easy. These cookies are proof that you can enjoy all the sweetness and chewiness of traditional sugar cookies without any dairy! Omitting the dairy in these cookies also ensures they last a little longer technically – I cannot speak for how quickly they will be devoured!

I love approachable, convenient and easy recipes that anyone can put together. I love doing things homemade and getting creative with color and using the ingredients in my kitchen that work 10 different ways. I don’t want you or me to go to the grocery store and buy a bunch of things that you only need for one recipe once a year!! That is not environmentally friendly, it’s not budget friendly and it’s not realistic! Claire Bear Bites recipes are all about being approachable and fun so that whether you’re a baking novice or a seasoned pro, this recipe is designed for everyone.
The secret to dreamy soft and chewy texture lies in the perfect balance of ingredients and baking time. Bake only for about 10 minutes if you’re going for that chewy cookie vibe and if you prefer a slight crunch, leave them in for 12-14 minutes. If you use a flour that is a bit more on the gritty side like coconut or almond you can anticipate that your cookies will be a little less soft and chewy. The all purpose flour really is so soft that when mixed with all the wet ingredients it becomes that dough that you desired to eat out of the bowl when your mum was baking! (you know what I mean friends!)
Making these dairy free sugar cookies is super easy! All you need to do is whisk the vegan butter and sugar together until well combined. Add the almond milk, vanilla, almond extract, and vinegar to the bowl and mix until combined. Once that is looking good you will want to add your flour, baking soda, baking powder and pink pitaya powder and mix well until the dough forms.
At this point it’s going to look super cute and maybe even like playdough! Throw the vegan white chocolate chips into the bowl, reserving a few to add to the top of the cookies, and mix through. Preheat your oven to 350F, cover the dough and refrigerate while the oven is preheating. Once your oven is at temperature you can take your dough from the fridge and roll balls using a tablespoon to scoop each ball out. Lightly roll your balls in sugar and place them on the baking tray about 2 inches apart from one another.
Grab those extra vegan white chocolate chips to the top of each cookie then bake for 10-12 minutes or add a few minutes to that if you’re going for the crispy edge. Depending on the size that you go for with these cookies; the recipe should make around 20.
Aside from the fact that they are pink and white sugar cookies, you can also fall in love with these cookies based on the simplicity of the recipe or for the fact that they are so delicious. They are easy to make and easy to eat! You likely have all of the ingredients already but if you don’t have the pink powder this recipe will still make an amazing sugar cookie!
While this recipe does call for nut ingredients; it is still easy to omit them and make this recipe friendly for everyone. Gluten can be omitted by changing the flour type and they are already vegan, dairy free and egg free!
