I am obsessed with making homemade chocolates and these dairy free white chocolate raspberry cups are not only the most delicious indulgence, but they will also hopefully inspire you to get in the kitchen, skip the store bought stuff and see just how easy and quick it is to create your own! What You Will Need for This Recipe

  • Vegan White Chocolate: This is the base of our chocolate cups, providing a creamy and sweet canvas for the raspberry jam. Vegan white chocolate is perfect for those who follow a dairy-free diet but still crave the luxurious taste of white chocolate.
  • Coconut Oil: Added to the chocolate, coconut oil helps smooth out the mixture, making it easier to work with. It also adds a slight tropical hint that you’ll love!
  • Raspberry Chia Jam: Whether you use homemade or store-bought, raspberry jam offers a fruity contrast to the sweetness of the chocolate. My homemade raspberry jam, especially, offers freshness and is refined sugar free!

There’s something truly magical about making your chocolates at home. It’s not just about the end product; it’s the process of transforming simple ingredients into something that you get to enjoy! These White Chocolate Raspberry Cups are everything I love about homemade desserts: the customization, the fresher ingredients, and the joy of sharing something you’ve made with your own hands. How to Make These White Chocolate Raspberry Cups

The creation of these chocolate cups starts with melting vegan white chocolate mixed with a touch of coconut oil in the microwave. This method ensures a smooth, pourable consistency that’s perfect for molding. This is the mold that I used, click here.

Next, a small amount of melted chocolate is swirled inside Reese’s silicone molds or a muffin tin lined with cupcake liners, creating the outer shell of the cups. Put them in the fridge for a moment and then continue to build your cups by adding a dollop of raspberry chia jam in the middle. Seal the deal by adding more melted chocolate on top and then put back in the freezer to settle.

Tips for Making The Best No-Bake Desserts!

  • Choose the Right Containers: Using silicone molds or cupcake liners helps in effortlessly removing the chocolates once they’re set, without breaking.
  • Patience is Key: Allow the chocolate to fully set in the fridge or freezer before filling and re-sealing with more chocolate. This ensures that your layers are distinct and your cups are neat.
  • Adjust Sweetness: If using store-bought jam, which tends to be sweeter, consider reducing the amount per cup to balance the overall flavor profile.

White Chocolate Raspberry Cups

Enjoy these quick and easy Vegan White Chocolate Raspberry Cups. They come together in minutes and can be enjoyed anytime you're craving something a little sweet, fresh and delicious. Made with only three ingredients, these no bake desserts are sure to become a favorite!

Equipment

  • fridge, silicone molds

Ingredients
  

  • 16 oz vegan white chocolate
  • 1 tbsp coconut oil
  • homemade raspberry chia jam, or raspberry jam of choice

Instructions
 

  • In a microwave safe bowl, add the white chocolate and coconut oil and microwave in 30 second increments, stirring in between, until completely melted.
  • Into a Reese’s silicone mold OR a muffin tin lined with cupcake liners add around one teaspoon of white chocolate, swiping to cover the sides.
  • Add to the fridge or freezer until set. Then simply fill each cup with homemade raspberry chia jam, then top with more white chocolate to cover.
  • Add back to the fridge or freezer until completely set, pop out and enjoy!

Notes

** I keep these chocolates in the freezer as that’s my preference. But you can also keep them in an airtight container in the fridge for up to a few weeks. (If they last that long 😉
** This recipe is absolutely at its best using my homemade raspberry chia jam. The freshness and milder sweetness complement the creamy white chocolate perfectly. If you opt for store-bought, I’d suggest not filling it with as much jam as the sweetness will be overwhelming. GRAB MY HOMEMADE RASPBERRY CHIA JAM HERE
