When I tell you these almond butter cups are addictive, I’m not kidding. Seriously, I made them a few times, and they fly off the counter every single time. My hubby and I are truly obsessed. I would say we are pretty healthy people and care a lot about what we put in our bodies, but my goodness, we both have a sweet tooth that cannot be neglected! These Crunchy Dark Chocolate Almond Butter Cups are our new favorite thing.

  • Walnuts: Finely chopped for extra crunch and nutty flavor. Omit nuts if you can’t eat them or switch up the nuts if you fancy.
  • Fresh raspberries: A juicy, tart topping that adds color and balance. Use whatever fruit you want, I just love the combination of dark chocolate and raspberries!

How To Make Almond Butter Cups

Make the base

In a large mixing bowl, crush the rye crackers and combine with Rice Krispies, chopped walnuts, almond butter, maple syrup, and a pinch of salt. Stir until evenly combined.

Fill the molds

Scoop the mixture into your silicone mold, pressing down firmly with the back of a spoon. This is the mold I used, and I love it! The cups are so easy to remove from it.

Melt the chocolate

Combine dark chocolate chips and coconut oil in a microwave-safe bowl. Melt in 30-second intervals until smooth.

Top it off

Spoon melted chocolate over each mold, ensuring full coverage. Place a fresh raspberry on top of each.

Set and serve

Freeze for 10–15 minutes, then pop out and enjoy your homemade almond butter cups!

Equipment

  • Silicone mold, fridge or freezer

Ingredients
  

  • 15 sourdough rye crackers I used Finn Crisp, crushed
  • cups Rice Krispies
  • 1 cup almond butter
  • ½ cup walnuts chopped finely
  • 3 tbsp maple syrup
  • pinch salt
  • 12 oz dark chocolate chips
  • 1 tbsp coconut oil
  • fresh raspberries

Instructions
 

  • Begin by crushing the sourdough rye crackers and adding to a large mixing bowl.
  • Next, add the Rice Krispies, walnuts, almond butter, maple syrup and a pinch of salt. And mix to combine.
  • Spoon this mixture into a silicone mold and press down.
  • Melt the chocolate with the coconut oil in the microwave in 30 second increments.
  • Top the mixture in the mold with melted chocolate and a fresh raspberry and freeze for 10-15 minutes.
  • Pop these delicious chocolate cups out of the mold and serve immediately.
  • Enjoy!

Notes

I used my favorite sourdough rye thins from FINN CRISP. As they are packed with fiber, they are super crunchy, and they taste amazing. If these aren’t available to you, you can use any cracker of your choice.
I used pure dark chocolate for this recipe as it is a great counterpart to the sweetness of the base. If you are not a fan of dark chocolate, this recipe would be delicious with white or milk chocolate.
I topped these cups with fresh raspberries, which added a delicious fruity and tangy taste! Feel free to add any berry of choice!
