Tropical Lychee Overnight Oats Ingredients

  • Gluten Free Quick Oats: I love quick oats for their pudding-like texture. They’re softer and create a creamier base. Any oats can be used, but I opted for gluten-free quick oats over regular rolled oats.
  • Pink Pitaya Powder: This superfruit powder, made from dragon fruit, adds a spectacular shade of pink and numerous health benefits, including fiber, vitamin A, antioxidants, and essential fatty acids like omega 3 & 6.
  • Ground Flax: A fantastic source of fiber, ground flax improves digestion and reduces the risk of heart disease and type 2 diabetes. It’s a daily staple for me.
  • Tropical Fruits: I used some of my favorite tropical fruits like lychees, pink pineapple, and green grapes. Feel free to use any fruits you love or that are in season. Frozen or fresh will work fine for this recipe!

How to Make This Tropical Lychee Overnight Oats

To make your Tropical Lychee Overnight Oats, start by combining all the main ingredients. In a bowl, mix the gluten-free quick oats, plant milk, ground flax, pink pitaya powder, mushroom immunity powder, maple syrup (if using), and mashed banana. Stir thoroughly to ensure everything is well combined. Once mixed, cover the bowl and refrigerate for at least 1 hour, but preferably overnight, allowing the oats to soak up the liquid and soften to a creamy texture.

When you’re ready to enjoy your oats, remove them from the fridge and add your toppings. Top the oats with shredded coconut, green grapes, lychees, pink pineapple, and sunflower seeds. This not only adds extra flavor and texture but also boosts the nutritional value.

What Are Overnight Oats?

Overnight oats are a no-cook method of preparing oatmeal. All you have to do is mix oats with a liquid like plant-based milk or water and let it set for at least an hour. I love to put add-ins like fruits and superfoods to take things to another level. The oats soak up the liquid and soften, creating a creamy and delicious breakfast that’s ready to eat in the morning!

Why This is a Great Meal Prep Option

Overnight oats are perfect for busy mornings because they require minimal preparation. You can make a batch for the week and grab a jar from the fridge each morning. They are versatile, allowing you to mix in your favorite flavors and toppings. Plus, they’re packed with nutrients to keep you energized throughout the day.
