Eat the Rainbow Key Ingredients!

  • Gluten-Free Oats: In this recipe, I’ve opted for gluten-free oats, but you can choose old-fashioned oats if that’s your preference. Oats have always been a breakfast favorite – they’re hearty, nutritious, and the perfect canvas for our rainbow yogurt art. Plus, you can easily adjust the recipe to make multiple servings for meal prep.
  • Plant Milk: To create that creamy oat goodness, I’ve chosen almond milk as our binder. It’s not only simple and affordable but also adds a touch of protein and a creamy texture to our oats.
  • Chia Seeds: These little powerhouses are a must for overnight oats. Not only do they give our oats an amazing, solid texture, but they also bring a ton of nutrition to the table. Chia seeds are high in protein and omega-3 fatty acids, giving you sustained energy throughout the morning.
  • Maple Syrup: When it comes to sweetening our oats, nothing beats the natural and unrefined sweetness of maple syrup. For those not following a vegan diet, honey is a wonderful alternative.

  • Plant-Based Greek-Style Yogurt: For the yogurt topping, I’ve chosen a Greek-style plant-based yogurt. Its thick and creamy texture mirrors dairy yogurt, making it an ideal choice.
  • Various Superfood Vegetable and Fruit Powders: Here’s where the rainbow truly comes to life! While I’ve used an array of superfood powders for those vibrant colors, I understand that not everyone may have these on hand. You can start by incorporating a few and use natural food dye for the rest. These superfood powders are packed with unique nutrients and benefits, and you can gradually introduce them into your diet for a healthful rainbow journey.

Rainbow Overnight Oats

Begin by combining gluten-free oats, almond milk, chia seeds, maple syrup, and a hint of vanilla in a bowl. Mix them all together until well combined.

Cover the bowl and pop it in the refrigerator for a minimum of 2 hours, or leave it overnight for maximum flavor infusion. Our oats need that time to soak up all the goodness!

Eat the Rainbow Breakfast Bowl

Alwayssss eating the rainbow!! If you’re new to @clairebear_bites THIS is ME! Bright, colorful, natural, nutritious food! And FUN! We are never too old to play without food. And eating healthy has never been so fun! Delicious heart healthy oats, topped with yogurt and fruit in all the colors of the rainbow… does it get any better?! NOPE! So let’s ride the rainbow to breakfast happiness!!!

Ingredients
  

Ingredients

  • 1 cup gluten free oats
  • cups plant milk
  • 1 tbsp chia seeds I used BARE ORGANICS
  • 1 tbsp maple syrup
  • ¼ tsp vanilla

Yogurt Topping Ingredients

  • cups plant based yogurt split into 7ths
  • purple pinch of pitaya powder and blue spirulina powder
  • dark blue pinch of blue spirulina powder
  • light blue ½ a pinch blue spirulina powder
  • green pinch of barley greens powder
  • yellow pinch of mango powder
  • orange pinch of carrot powder
  • red pinch of beetroot powder

Fruit Ingredients

  • blueberries halved
  • kiwi fruit sliced
  • mango diced
  • cantaloupe diced
  • strawberries chopped

Instructions
 

  • Combine all overnight oats ingredients into a bowl and mix well to combine
  • Cover and refrigerate for min 2 hrs, maximum overnight
  • Once oats are ready, remove from the fridge and set aside.
  • Split your yogurt into 7 small bowls and add your superfood powders to each and mix thoroughly to combine.
  • Chop your fruits and set aside
  • Grab your oats and spoon each rainbow yogurt into sections on top. Add your fruits to match your colors if you choose. (Feel free to decorate any way you like! It’s all about having fun!). Then grab your spoon and ENJOY!!
