
When life hands you challenges, make happy food! That’s the philosophy that guides me in the kitchen. Today, from the cozy corners of my home, I’m thrilled to share a brekkie that’s been in the making for a while. Walnut Nice Cream is here to put a smile on your face and a dose of goodness in your body. Amidst the hustle and bustle of life, this recipe is a reminder to be kind to yourself, cherish your body, and savor the simple pleasures.
FROZEN BANANA: using banana as a vase for non dairy ice cream not only gives it a beautiful sweet texture. It also makes ice cream a breakfast food! Loaded with potassium and fiber. It gives you energy and sustains you for longer.
WALNUTS: I loveee walnuts and boy do they make a great flavor base for non dairy ice cream and smoothies. Rich nutty flavor and loaded with healthy fats it is such a beautiful flavor mixed with banana. Pecans can also be used.
OATS: I opted for gluten free oats. If you aren’t staying clear of gluten you can absolutely use regular old fashioned oats. They add a beautiful thickness and texture to this recipe and also help fill you up and give you energy.
PLANT MILK: the creamier the better! I used cashew milk. Flax or almond will also be good options.
VEGAN VANILLA PROTEIN POWDER: starting your day or snacking on this nice cream to curb that sweet tooth will also be fueling your body. By adding protein powder you are boosting the nutritional value and sneaking in added protein. I use OWYN for my protein powder of choice. It’s a clean vegan protein that also contains a greens blend. It’s not chalky and blends beautifully!
MUSHROOM IMMUNITY POWDER: adding any added nutrients when you can is something I try to focus on in every recipe and every meal I have. Adding superfoods to things like smoothies and nice cream and oats it’s so easy! I don’t go a day without mushroom powder. It aids with bloating and digestive issues, reduces inflammation and can improve concentration. It has little to no taste so of course it had to be added to this delicious nice cream. This ingredient is absolutely optional. So feel free to omit it if you don’t have it on hand or are not willing to purchase 🙂
FRESH MANGO: the toppings is where we can turn such a simple recipe into a show stopper. I chose to make a mango rose. You can absolutely just add sliced mango. FRESH KIWI FRUIT: I also decided to top my nice cream with another fruity food art! These amazing kiwi flowers are just so fun and so EASY to create! I have a tutorial on making them so please take a look!
FRESH STRAWBERRIES: nothing for me beats fresh strawberries on a smoothie or nice cream. Sweet. Juicy and bursting with vitamins and antioxidants. Just simply halve and add to the bowl!
Blend and Create: In your trusty blender, combine the frozen bananas, finely chopped walnuts, gluten-free oats, plant milk, vegan vanilla protein powder, and mushroom immunity powder. Blend until the mixture achieves a smooth, creamy consistency.
Serve and Adorn: Scoop the luscious concoction into your chosen bowl (I personally adore my @coconutbowls!). Now comes the artistic touch – crown your creation with fresh fruit toppings of your choice. Whether you opt for a mango rose, a kiwi flower (check out my tutorial video!), or simply sliced strawberries, let your inner artist shine.
