Pink Vegan Sugar Cookies
These perfectly pink vegan sugar cookies are dairy free and egg free, perfectly sweet, chewy and buttery and the best excuse for a fun sweet treat!

made with simple ingredients, one bowl, and baked in just 10 minutes these cookies are perfect for vegans and non vegans alike! (Shhh no one will know the difference ;)

- 2 cups all-purpose flour
- 1½ tbsp pink pitaya powder/dragon fruit powder I used Nature Restore
- 1 cup white sugar extra for rolling
- 1 stick vegan butter 1/2 cup
- ¼ cup almond milk
- ¼ tsp white vinegar
- 1 tsp vanilla extract
- ¼ tsp almond extract optional
- ¾ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- ½ cup vegan white chocolate chips
In a large bowl whisk/beat the vegan butter and sugar together until well combined.
Next add the almond milk, vanilla, almond extract (if using) and vinegar and mix to combine.
Then add the flour, baking soda, baking powder and pink pitaya powder and mix well until the mixture forms a dough.
Add the vegan white chocolate chips to the bowl, reserving a few to add to the top of the cookies, and mix through.
Pre heat your oven to 350 Fahrenheit then Cover the dough and refrigerate your dough while the oven is pre heating.
Then roll rounded Tablespoons of the dough, lightly roll in sugar and place them 2 inches apart on a non stick baking tray.
Add a few of the vegan white chocolate chips to the top of each cookie then bake at 350 for 10-12 minutes.
You may need several batches depending on the pan size :)

**if you aren’t a fan of almond extract I highly recommend omitting that ingredient.
**for a soft chewy cookie, bake for 10 mins. For a slightly crunchier cookie bake for 12-14 mins.
** you can sub the almond milk for any plant milk of choice.
** the white sugar helps the cookies to keep their light color but you can absolutely sub for coconut sugar!
**if you’re feeling extra fruity. You can add 2 tbs of strawberry powder for a fun twist! (I’ve tried them. Can confirm. DELICIOUS (if you do add strawberry powder, omit the almond extract as it will overpower the taste.
