Prepping the Base!

Before we jump into the tantalizing world of these oat bites, gather your base ingredients. The foundation of our bites is a mixture of blended gluten-free oats and shredded coconut. The oats offer a delightful texture while ensuring you’re filled with fiber and energy. Next, get your hands on that mesmerizing pink dragon fruit powder, which doesn’t just give our bites their signature hue but loads them up with antioxidants!

Blend & Mix!

Grab a large bowl, and let’s get mixing! Pour in your blended oats, shredded coconut, the creamy macadamia nut butter (feel the tropical vibes yet?), and swirl in that golden maple syrup. Strawberries n Cream Oat Bites

Take a bite on the fun, sweet delicious side with me! These absolutely craveworthy oat bites are topped with dreamy vegan white chocolate and freeze dried strawberries. And one bite will NEVER be enough! 🤤💕 With the amazingly bright, colorful and healthy addition of my favorite dragon fruit powder heart healthy oats, sweet and tangy freeze dried strawberries and sweet silky vegan white choc! these oat bites are not only DELICIOUS but are so fun! These pretty in pink oat bites are about to be your new favorite sweet treat.

Equipment

  • freezer

Ingredients
  

Base ingredients

  • 2 cups gluten free oats blended
  • 1 cup shredded coconut
  • ¼ cup coconut oil melted
  • ¼ cup macadamia nut butter or nut butter of choice
  • ¼ cup maple syrup
  • ½ tsp sea salt
  • 3 tbs pink dragonfruit powder

Topping Ingredients

  • 12 oz vegan white chocolate
  • 2 tsp coconut oil
  • freeze dried strawberries

Instructions
 

  • To a large bowl add the blended oats, shredded coconut, macadamia nut butter, maple syrup, coconut oil, salt and pink dragonfruit powder and mix well to combine.
  • Roll tbs of the mixture into balls and press into a square silicone mold. (Or mini muffin mold)
  • Melt the white chocolate with the coconut oil in a bowl in the microwave in 30 second increments until completely melted.
  • Top the oat mixture in the molds with white chocolate, and sprinkle with a few crushed freeze dried strawberries
  • Refrigerate until they have hardened. Pop out and enjoy **store in the refrigerator

    Made these for a sweet, but healthy snack and they are worth it! I used what I had and used peanut butter and crushed up freeze dried strawberries. It was delicious and now I want to experiment with other flavors.
