They perfect combination of health and indulgence. These vibrant little bites aren’t just visually stunning; they’re a burst of flavor, texture, and health benefits in each mouthful. Ready to unveil the magic?
Before we jump into the tantalizing world of these oat bites, gather your base ingredients. The foundation of our bites is a mixture of blended gluten-free oats and shredded coconut. The oats offer a delightful texture while ensuring you’re filled with fiber and energy. Next, get your hands on that mesmerizing pink dragon fruit powder, which doesn’t just give our bites their signature hue but loads them up with antioxidants!
Grab a large bowl, and let’s get mixing! Pour in your blended oats, shredded coconut, the creamy macadamia nut butter (feel the tropical vibes yet?), and swirl in that golden maple syrup. Add a touch of melted coconut oil for that smooth texture. Finally, the pièce de résistance, sprinkle in that pink dragonfruit powder! Mix away until you achieve a uniform, moldable mixture.
This is where the fun begins! Roll tablespoons of your mixture and press them into square silicone molds. If you’re feeling a bit adventurous or simply don’t have a square mold, a mini muffin mold works wonders too! The shape might change, but the taste remains phenomenally delightful!
What’s cream without a touch of luxury? For this, we’ll melt some vegan white chocolate with a dab of coconut oil. The coconut oil ensures our chocolate achieves that silky-smooth texture. Once melted, cascade this luscious white chocolate over the oat mixture in the molds.
Time for the crown jewel – sprinkle your bites with crushed freeze-dried strawberries. Not only do they add a tangy contrast to the sweet white chocolate, but they also elevate the visual appeal of these oat bites. Pop them into the refrigerator and let them set.
When we talk about snacks, there’s a universe of difference between homemade delights and store-bought quick fixes. Often, we’re lured by the convenience of packaged options, but what’s lurking inside those attractive packets? A plethora of preservatives, artificial flavors, and colors, not to mention hidden sugars, even if they’re branded as ‘healthy’. Contrast this with our Strawberries n Cream Oat Bites: they are a testament to the beauty of natural ingredients. No additives, no cryptic ingredient list—just a wholesome blend of nutrient-rich goodness, from the antioxidant-rich dragonfruit powder to the heart-healthy oats. The natural sweetness of maple syrup replaces processed sugars, offering a sweetness that’s kinder to your body.
But beyond the ingredients, there’s another undeniable advantage to going homemade: customization. Whether you’ve got allergies or specific dietary preferences, whipping up your own batch means you’re in the driver’s seat. Plus, every time you bite into one of these oat delights, you’re experiencing the unparalleled freshness of a snack made from scratch, not something that’s been sitting on a shelf. So, the next time you’re tempted to grab a store-bought snack, remember: nothing beats the taste and health benefits of homemade!
Whether it’s for a snack, dessert, or a treat for a special occasion, these are sure to impress! They’re vegan, gluten-free, and radiate happiness with their vibrant pink hue. So, the next time you want to whip up something that’s as delightful to the palate as it is to the eyes, you know what to make!

Made these for a sweet, but healthy snack and they are worth it! I used what I had and used peanut butter and crushed up freeze dried strawberries. It was delicious and now I want to experiment with other flavors.
