Citrus No Bake Vegan Mini Cheesecake Roses

This Valentine's, or any day you feel like spreading some love, make this amazingly cute little Citrus No Bake Vegan Cheesecake Roses. These mini cheesecakes combine the tanginess of citrus with the richness of vegan cream cheese, all nestled in a crunchy graham cracker crust. They're dairy-free, gluten-free, and absolutely no-bake, making them an easy dessert choice for everyone to enjoy.

Vegan Cheesecake No Bake

What would this world be like if cheesecake didn’t exist?? I don’t even want to think about it! I remember when I chose to stop eating dairy products I was absolutely gutted by the idea of not having cheesecake anymore!! Fast forward some time now and I am happily making these vegan mini cheesecakes and enjoying every bite! I’ve fooled a few folks and pleased even more with these goodies and I am so excited for you to try them!

Today we’re embracing the art of no-bake desserts with a citrus twist! My Citrus No Bake Vegan Cheesecake Roses are not just desserts; they’re a celebration of vibrant flavors, textures, and the joy of plant-based baking. Perfect for Valentine’s Day, special occasions, or whenever you crave a sweet, guilt-free indulgence, these cheesecakes are sure to impress. I’m also truly obsessed with the crust of these cheesecakes, I love graham crackers and there is nothing better than finding a vegan graham cracker that you can turn into the perfect crust for a no bake cheesecake. What sets these vegan mini cheesecakes aside from the rest is that they are adorably made into little roses which make them really precious in appearance. All of the ingredients are simple and easy to find which also makes these babies a winner! It’s time to fall in love with these dairy free cheesecakes, let’s dig in! 

Ingredient for Vegan Cheesecakes

  • Vegan Cream Cheese: Vegan cream cheese might be the best thing since sliced bread! I love having this ingredient in my kitchen because I often use it in so many different ways; today it is the base of our cheesecake, providing a creamy, rich texture and depth of flavor without any dairy!
  • Confectioners’ Sugar: Adds sweetness and helps to smooth out the cream cheese mixture without any granular textures.
  • Citrus Zest: Infuses the cheesecakes with a bright, aromatic flavor that compliments the sweetness perfectly.
  • Sumo Citrus Juice or Fresh Squeezed Orange Juice: You can use any citrus of your choice, I went with sumo citrus because I love that they are sweet and fragrant and not overly sour. It adds the perfect amount of freshness to these cheesecake roses.
  • Vegan Cream: Adds lightness and airiness to the filling, making it fluffy and delightful.

Graham Cracker Crust

  • Vegan Graham Crackers: Winners in my eyes, I don’t want a cheesecake if it doesn’t have a graham cracker crust… Okay maybe that’s a lie but they definitely stand out among all others! Using gluten free graham crackers creates a sweet, crunchy base that contrasts beautifully with the creamy filling.
  • Granulated Sugar: Enhances the sweetness and helps bind the crust together.
  • Vegan Butter: Adds richness and ensures the crust holds its shape perfectly.

How to Make Vegan Cheesecake Cups

Creating these mini cheesecake roses is a sweet process; no pun intended. Start with mixing the creamy filling, spoon it into your chosen silicone moulds, and let the freezer do the rest. I want to note that you can use any mold but if you’re interested in making them rose shaped like mine, click here. A sweet graham cracker base adds the perfect crunch to each bite, creating a dessert that’s as multi-dimensional in texture as it is in taste. Once your mini cheesecakes have hardened it’s time to add your crust to the top by mixing all the ingredients and pressing it into each mould – put it back in the freezer until they are both hardened and then it’s time to decorate. 

These dairy free cheesecakes are ready to eat once everything has settled and you can pop them out of the mould without crumbling. If you choose to garnish your cheesecake you could consider an assortment of fresh fruits like berries or mango slices, a dollop of vegan whipped cream, or a drizzle of vegan caramel or chocolate sauce for an extra touch of decadence. 

How to Store Leftover Cheesecake

Leftover cheesecakes can be kept in the refrigerator for up to a week or in the freezer for a longer shelf life. Ensure they’re tightly covered or stored in an airtight container to maintain their freshness and prevent any freezer burn. I’ll be surprised if there are any left to store for a later date; they honestly are irresistible! 

Tips For Making Vegan No Bake Cheesecake Mini Cakes

  • Sumo citrus adds an exceptional sweetness and fragrance, but feel free to use your favorite citrus fruit.
  • Silicone rose moulds add a special touch, but muffin moulds work great for a simple yet elegant dessert. You can purchase the same rose moulds as I used here.

Citrus No Bake Vegan Cheesecake Roses

Wow your sweetheart this valentines with these adorable, rose cheesecakes that are creamy, rich, vegan, no bake and loaded with vibrant citrus flavor! These delicious cheesecakes are just as fun to make as they are to eat! A Valentine’s Day must try and a fun treat for friends and family all year round! No one needs an excuse for cheesecake!! Happy munching!

Equipment

  • silicone moulds

Ingredients
  

  • 16 oz vegan cream cheese room temperature
  • 1⅓ cups confectioners' sugar
  • 1 tbsp citrus zest I love sumo citrus, but oranges also work
  • ¼ cup sumo citrus juice or fresh squeezed orange juice
  • 2 cups vegan cream

Crust Ingredients

  • 2 cups vegan graham crackers finely crushed
  • 1 tbsp granulated sugar
  • ½ cup vegan butter melted

Instructions
 

  • In a large bowl, beat the vegan cream cheese and vegan cream until light and fluffy.
  • Then add in the sumo citrus zest and juice and beat again until thoroughly combined.
  • Spoon the mixture into silicone rose moulds or regular muffin moulds if you choose, allowing for room at the top to add the crust. and transfer to the freezer to set (at least 2 hours)
  • While the cheesecakes are setting make the crust by mixing the crushed graham crackers, vegan butter and sugar in a bowl and set aside.
  • When the cheesecakes have set. Press the crust onto each cheesecake and return to the freezer to harden. (Around 30 mins)
  • Once the cheesecakes have all been completely set. Remove from the freezer. And enjoy!

Notes

** I opted to use sumo citrus in the recipe. The flesh is so sweet and juicy and the zest is especially fragrant. You can absolutely use regular oranges though!
** If you don’t want to purchase a rose mould you can use a silicone muffin mould! All of my favorite silicone moulds are available in my shop!
