Raspberry Lemon Overnight Oats

There are few flavor combinations better than raspberry and lemon. It screams freshness and shouts pure deliciousness. Bright, vibrant and incredibly simple. You’ll save time and gain incredibly nutritious and flavorful breakfasts for the week with these amazing raspberry lemon overnight oats. Created with the AMAZING raspberry powder from the incredible humans at @nature.restore these oats are not only bursting with raspberry flavor, but vitamin C and antioxidants. Healthy, satisfying and simple.

Ingredients
  

  • 2 cups gluten free oats
  • 2 tbs chia seeds
  • 1 large banana mashed
  • ½ cup vegan Greek yogurt
  • 1 tsp fresh lemon zest
  • 2 tbs raspberry powder I used @nature.restore
  • 1½ - 2 cups almond milk

For Serving Ingredients

  • additional vegan Greek yogurt mixed with mashed raspberries
  • fresh whole raspberries

Instructions
 

  • In a large bowl, mix together oats, chia, banana, yogurt, lemon zest, raspberry powder and almond milk.
  • Spoon into an airtight container and refrigerate for atleast 30 mins.
  • When ready to serve, mix 1 cup vegan green yogurt with 1/2 cup mashed fresh raspberries in a bowl and set aside.
  • Take a 1/3 of the mixture and layer it in a serving glass with the raspberry yogurt mixture.
  • Top with a few fresh raspberries and a dollop of the raspberry yogurt.
