Raspberry Lemon Overnight Oats

Ingredients
  

  • 2 cups gluten free oats
  • 2 tbs chia seeds
  • 1 large banana mashed
  • ½ cup vegan Greek yogurt
  • 1 tsp fresh lemon zest
  • 2 tbs raspberry powder I used @nature.restore
  • 1½ - 2 cups almond milk

For Serving Ingredients

  • additional vegan Greek yogurt mixed with mashed raspberries
  • fresh whole raspberries

Instructions
 

  • In a large bowl, mix together oats, chia, banana, yogurt, lemon zest, raspberry powder and almond milk.
  • Spoon into an airtight container and refrigerate for atleast 30 mins.
  • When ready to serve, mix 1 cup vegan green yogurt with 1/2 cup mashed fresh raspberries in a bowl and set aside.
  • Take a 1/3 of the mixture and layer it in a serving glass with the raspberry yogurt mixture.
  • Top with a few fresh raspberries and a dollop of the raspberry yogurt.
