Ingredients for your next breakfast

  • EXTRA FIRM TOFU: When eating tofu raw and especially for breakfast (as it mimics scrambled eggs so well) the texture of an extra firm tofu is essential. It also means you can skip the pressing process (removing excess liquid) instead you can simply dab with a paper towel and you’re ready to CRUMBLE! Tofu is an amazing breakfast choice. Loaded with plant protein, calcium and iron. It’s a perfect way to start the day. 
  • CAYENNE: For a wack to start off your day! I love cayenne. You can add as much or as little as you like depending on your spice tolerance. Cayenne also aids digestion so it’s a perfect addition. 
  • BLACK PEPPER: Fresh ground black pepper is simply an essential. We are using very simple ingredients all of which balance perfectly. 
  • CORN KERNELS: Sweet pops of bright corn add not only texture but a beautiful sweet flavor to counterbalance the spice. I simply used drained canned corn KERNELS 🙂 
  • BABY YELLOW BELL PEPPER: These sweet and crunchy beauties are not only packed full of vitamins and minerals they bring a slight Smoky sweetness that pairs so beautifully with spice. If you can’t find the baby ones. You can use slice red yellow or orange bell pepper 
  • TOMATO: Sweet and acidic. I love using raw tomatoes. They maintain all their vitamins and are a bright and beautiful addition. I used perfectly ripe Roma tomatoes. But beefsteak tomatoes or even heirloom would be magical 
  • KALE: I’m here to show you that kale is worth the hype! Brimming with so many amazing healthy benefits. When prepared and paired right it can be such a great addition to your meals. 
  • SUNFLOWER SEEDS: Adding healthy fats, iron and protein. Seeds are such a great addition to meal times. They add the most amazing crunch to this breakfast. 
  • AVOCADO: Creamy and cooling. Avocado acts as a creamy dressing. A little with each bite. Cuts through the spice and is pure deliciousness 
  • HEMP SEEDS: Another pump up of healthy plant protein. Hemp is such a go to if you’re following a plant based diet. These beautiful lil green wonders not only taste great. They add amazing texture and nutrients to the dish. 
  • READY MADE RICE/QUINOA: I love making life easier and finding ways to cut on cooking time. If you happen to have leftover rice or quinoa. Perfect. Use that. Or I just happened to have found an amazing ready made heat and go quinoa pack. You can of course just make quinoa too.

Protein Power Breakfast Bowl

Looking for a healthy, protein packed, DELICIOUS start to your day?! Look no further! Mornings never tasted so good with my power packed brekky bowl!! Let me show you how to pack protein into your breakfast without meat and without sacrificing deliciousness!!!

Ingredients
  

  • 6 oz extra firm tofu pressed, crumbled
  • ¼ tsp salt
  • sprinkle cayenne adjust to taste
  • tsp black pepper ground
  • 1 cup corn kernels
  • 4 baby yellow bell peppers sautéed in a pan with olive oil
  • ½ large tomato sliced
  • 2 cups kale
  • 2 tbsp sunflower seeds
  • ½ avocado
  • 1 tbsp hemp seeds
  • 1 pouch rice/quinoa I used ready cook
  • chili garlic sauce

Instructions
 

  • Combine salt, cayenne, and pepper in a small bowl and mix well. Set aside
  • Prepare your veggies and set aside for plating.
  • Sautée bell peppers in a pan until slightly brown. Around 5 min. Set aside.
  • Press and crumble your tofu and set aside.
  • Heat your ready made rice or quinoa according to package instructions
  • Add each ingredient into a bowl and sprinkle the tofu with your cayenne mixture, and a drizzle of chili garlic sauce starts your day with a bang!!!
