Good morning, breakfast enthusiasts! Ever thought of having a dessert for breakfast? The creamy, tangy goodness of a key lime pie, but in a breakfast-friendly version? Today, I’m sharing a recipe that does just that – it brings the tropics right to your breakfast table!

The magic of this dish is in its versatility. It’s vegan, gluten-free, and packed with nutrients. The combination of vegan Greek yogurt and oats gives it a creamy texture and ensures you stay full until lunch. The zing of the lime, paired with the richness of coconut milk and cream cheese, creates a delightful play of flavors.

It’s more than just a breakfast; it’s an experience. Every spoonful feels like a tropical getaway. The layers of flavors, from the aromatic lime zest to the crunchy pistachios and graham cracker crumbs, ensure each bite is unique.

  • VEGAN GREEK YOGURT: you can find the most delicious creamy vegan green yogurt options now. Thicker than most vegan yogurts. It adds protein and a beautiful creaminess. You can absolutely use  regular greek yogurt too! 
  • OATS: heart healthy, protein packed and leaves you completely satisfied! I love oats! They are so versatile and the perfect fuel for your body! 
  • KEY LIMES/LIMES: I’ve always been the biggest lime fan! The aroma is intoxicating and I’m including the zest and the juice here for a tang and the bright floral pop from the lime zest is perfect. If key limes aren’t available, regular limes work amazingly.
  • COCONUT MILK: the most perfect decadent, tropical bliss you could hope for. I used unsweetened when making this recipe feel rich but not on the sugar 🙂 
  • SHREDDED COCONUT: I’m a hugeee shredded coconut fan. I’m all about texture and the bite from adding coconut here not only makes for an awesome mouth feel, the flavor is the perfect addition to these tropical inspired oats. 
  • VEGAN CREAM CHEESE: the readily available vegan versions of all the must haves are just mind blowing now! The flavor is still thick and creamy and mixed with these oats really brings them into the key lime pie level. Thick, creamy and delicious! 
  • CHIA SEEDS: these lil beauties are a MUST HAVE in vegan and regular diets! Packed with protein and essential amino acids. They pack a serious punch using just a few tablespoons! And they are the ultimate thickening agent for overnight oats! 
  • AGAVE OR MAPLE SYRUP: this sweetener is not essential, but if you like things on the sweety side it’s a perfect counterbalance to the zippp of the lime juice. Feel free to sub for any sweetener of choice. 
  • CRUSHED GRAHAM CRACKERS: you can’t have key lime pie without grahem crackers!!! The best unmistakable taste. And the ultimate topping. Be sure to use vegan ones if you are keeping this recipe vegan. And don’t use it until you’re ready to eat! 
  • PISTACHIOS: if you’re a nut freak like me, you’ll be cheering this crunchy pistachio choice for topping. Feel free to sub for any nut of choice, but that glowing green makes me smile 🙂 
  • MACADAMIA NUT BUTTER: if you haven’t delved into the amazing array of nut butters out there… you’re missing out! I’m a huge fan of macadamia nut butter, and it’s the perfect, creamy, tropical choice to top these key lime pie oats 

4 Steps to Breakfast tomorrow!

Get Mixin

Begin by mixing the oats, coconut, vegan Greek yogurt, vegan cream cheese, lime zest, your chosen sweetener, lime juice, and coconut milk in a bowl.

Let Chill

Once well-combined, cover and refrigerate for a minimum of 2 hours or ideally, let it set overnight.

Serving time!

Portion out the mixture into bowls, and garnish with fresh lime slices, dollops of macadamia nut butter, Greek yogurt, pistachios, and extra lime zest.

Key Lime Pie Oats

Don’t mind me. Just turning all of my favorite desserts into BREAKFAST! 🥹🙌🏻 stop. Drop. And rolllll your cute lil behind into the kitchen and make these DELICIOUS tropical key lime pie OATS! Zesty, bright, fresh, sweet and decadent. Allll of the flavors you know and love, with a few extras as always😎 it’s like a vacay in your mouth and I’m here for it!

Ingredients
  

  • ¾ cup vegan Greek yogurt
  • cups rolled oats
  • cup unsweetened coconut milk
  • ½ cup shredded coconut
  • 2 tbsp key lime juice or regular lime juice
  • 3 tbsp vegan cream cheese
  • 2 tbsp chia seeds
  • tsp key lime zest regular lime works too
  • 2 tbsp agave or maple syrup
  • crunched vegan graham cracker crumbs
  • pistachios
  • macadamia nut butter
  • extra vegan Greek yogurt
  • extra lime zest and lime slices

Instructions
 

  • In a mixing bowl, add the oats, coconut, vegan Greek yogurt, vegan cream cheese, lime zest, sweetener of choice, lime juice, and coconut milk.
  • Mix thoroughly, cover and refrigerate for minimum 2 hours or ideally overnight.
  • Once you’re ready to serve, add half the mixture to a bowl, and top with fresh lime slices, small dollops of the macadamia nut butter, Greek yogurt, pistachios, and extra lime zest.
  • Enjoy! Let’s have fun with our food!!
