With every bite, you’ll be transported to a world of brightness, zinginess, and pure, unadulterated flavor. This salad is a non-negotiable addition to your summer meal lineup!

Your healthy ingredients for this Sweet Corn Avocado Salad

  • HEARTS OF PALM RICE: I adore hearts of palm rice or noodles. They are such a great low carb option that give you the texture and mouthfeel of rice without the snack of carbs. It makes this salad extremely light and easily digestible 
  • CORN KERNELS: the best sweet pop! Texture wise and flavor wise the sweetness in corn pairs so incredibly with creamy avocado and tangy dressing. The perfect balance! 
  • CELERY: not only is celery crunchy and delicious. It’s also packed with water! It’s a great vegetable to add to summer salads especially as it’s refreshing and helps to  keep you hydrated without even knowing. 
  • BELL PEPPER: I used yellow bell pepper for the color and mild sweetness but orange or red would also be perfect. 
  • EDAMAME: adding a protein to every meal is essential. And edamame is such a wonderful choice of plant protein. They are young soybeans. They come frozen and are easily available. They are slightly sweet and nutty in flavor and are incredibly delicious in this salad. Adding health benefits as a whole plant protein and a great bitey texture. 
  • CELERY LEAVES: don’t throw out your celery leaves!!! They are so fragrant and hold most of the celery flavor! They are a great addition to salads and a great no waste option instead of adding a salad green! 
  • AVOCADO: creamy, beautiful, delicious avocado! One of my true loves! So versatile and adds the creaminess you would usually find in a Mayo type dressing but chock full of healthy fats and vitamins instead! I created a showstopper by turning my avocado into a rose centrepiece. And I’m here to tell you it is SO MUCH EASIER THAN YOU THINK!! I created a super easy to follow tutorial. Dressing Delight

Whisk all the dressing ingredients together in a bowl until they become a harmonious blend of flavor and zest!

Sweet Corn and Avocado Salad

The combination of textures and flavors will make your tastebuds do a happy dance! The sweet pops of corn, the ricey, but low carb option of hearts of palm rice and the creamy avocado are a match made in absolute yummy heaven. Paired with the lightest, brightest and zingy fresh dressing. This salad comes together so easily and is such a show stopper.

Ingredients
  

Salad Ingredients

  • 1 pack palmini hearts of palm rice
  • ½ cup sweet corn kernels
  • 3 celery stalks diced finely
  • ½ yellow bell pepper diced finely
  • ½ cup edamame shelled
  • celery leaves garnish
  • ½ of an avocado (for avocado rose) (how to make avocado rose linked above in blog)

Salad Dressing Ingredients

  • 1 clove of garlic crushed
  • 2 tbs olive oil
  • ¼ cup fresh lemon juice
  • salt and pepper to taste

Instructions
 

  • Prepare the dressing by simply whisking all ingredients in a bowl until well combined.
  • Prep all vegetables and set aside
  • Rinse and drain your palmini rice and add to a bowl along with the chopped celery, bell pepper, corn and edamame.
  • Drizzle over the desired amount of dressing
  • Serve in bowls, garnish with celery leaves and a beautiful avocado rose.
