  • 1 Tbsp coconut oil
  • 2/3 cup creamy peanut butter
  • 1/2 cup mixed nuts, roughly chopped

Instructions
 

  • Melt the chocolate: Add the white chocolate and coconut oil to a microwave-safe bowl. Microwave in 20–30 second intervals, stirring well between each, until completely smooth and melted.
  • Make the chocolate shells: Line a muffin pan with paper liners or use a silicone muffin mold. Spoon a layer of melted white chocolate into the bottom of each cup, spreading it slightly up the sides.
  • Add the peanut butter: Spoon the peanut butter into the center of each chocolate layer, keeping it away from the edges.
  • Cover with chocolate: Spoon the remaining melted white chocolate over the peanut butter, making sure each cup is completely covered.
  • Add the nuts: Sprinkle the chopped mixed nuts over the tops while the chocolate is still melted. Gently press them into the chocolate if needed.
  • Chill: Refrigerate for 1–2 hours, or until the chocolate is completely firm.
