What you will need for this Rice Krispies Breakfast Bowl:

  • OATS: I Chose gluten free oats for this. If you’re not looking to limit gluten. Regular old fashioned oats will be perfect. Oats are one of the best ways to start the day. The give you energy to kick ass. They keep you full and satisfied until your next meal. They are heart healthy and can lower cholesterol and are so incredibly versatile as you can see with this fun blue brekkie bowl! 
  • PLANT MILK: I used oat milk for a double oat whammy. But any plant milk of choice will work perfectly. 
  • CHIA SEEDS: Are just amazing at binding overnight oats. When you add liquid with chia they emulsify and enlarge and create the most beautiful pudding-like texture! They are also an amazing kick start to your day. Giving you plant protein and essential omega 3 fatty acids. Which are crucial if you follow a vegan diet 🙂 
  • BANANA: Adds the perfect amount of natural sweetness and adds to the thick texture of the oats. 
  • VANILLA: Vanilla will accentuate the beautiful sweetness and banana flavor. Be sure to use EXTRACT and not essence. 
  • PLANT BASED YOGURT: I chose a coconut based yogurt. But Greek plantbased would be amazing too. If you don’t follow a plant based diet. Feel free to use regular Greek yogurt 🙂 
  • BLUE SPIRULINA POWDER: If you follow any of my recipes or creations you will know my absolute LOVE for blue spirulina powder. Blue algae in powder form adds vitamins, minerals and protein to your diet and is very mild in flavor. You can add it to smoothies and yogurts just like this! 
  • WHEAT RICE CRISPIES: I chose an organic wheat rice krispie! You can use whatever you have on hand. Any cereal with a pop would be great! 
  • MACADAMIA NUTS: Adds such a yummy crunch. With added healthy fats. 
  • COCONUT CHIPS: Unlike shredded coconut, they have a firm crunch to them. They add a great texture and a yummy tropical nutty flavor. Can easily be subbed for shredded or dessicated coconut also. 
  • SUNFLOWER SEEDS: Are not only one of my favorite snacks all by themselves. They are a health powerhouse. They can be calorific so don’t go overboard but they give you healthy fats, iron and protein and taste amazing. Sprinkling a few on top give another great crunch! You could always omit or sub for pumpkin seeds! 

It’s time to create your breakfast masterpiece. Spoon the chilled oat mixture into a serving bowl. Then, generously layer your vibrant blue spirulina yogurt on top.

Now, for the finishing touches! Sprinkle ¼ cup of organic wheat rice crispies for a delightful crunch, add ¼ cup of chopped macadamia nuts for that nutty goodness, throw in some coconut chips for tropical flair, and don’t forget a pinch of sunflower seeds for that extra crunch. The more, the merrier!

Superfood Rice Crispy Breakfast Bowl

Holy vacation in ya mouth Batman!! You guys food can be so dang FUN!! Nutritious, colorful, satisfying and nourishing food can also be a party in ya mouth!! Hitting all the right notes with naturally blue spirulina colored yogurt. Nutritious heart healthy oats with pops of rice crispies, and tropical coconut and macadamia. ISSA party always at @clairebear_bites and you have an unlimited pass!! IT'S BREKKIE TIME!!

Ingredients
  

  • ¾ cup oats gluten free
  • cups plant milk
  • 1 tbsp chia seeds
  • ½ banana mashed
  • ¼ tsp vanilla
  • 1 cup plant based yogurt
  • 1 tsp blue spirulina powder
  • ¼ cup organic wheat rice crispies
  • ¼ cup macadamia nuts chopped
  • ¼ cup coconut chips
  • sprinkle of sunflower seeds

Instructions
 

  • Combine oats, milk, chia, banana and chia in a bowl and mix thoroughly. Cover and refrigerate for 2 hrs, up to overnight.
  • Once the oats are ready, in a separate bowl. Mix your yogurt and blue spirulina and spread on top of oats.
  • Top with rice crispies, macadamia nuts, sunflower seeds and coconut.
  • Dive into protein packed, holiday in ya gob yumminess!!! ENJOY!!
