I’m all about cute food if you didn’t notice and a chia pudding is not safe! I will make anything pink and adorable given I have the opportunity, and what better occasion than Valentines Day?! These Strawberry Chia Pudding Pots are so delicious with the layers of goodness and topped with the most precious little strawberry heart. They are amazing for meal prepping, surprising someone with a special little treat or creating yourself the ideal pick me up. I appreciate chia pudding at least three days a week because they are just so easy to make, extremely customizable and always satisfying. I get all the energy I need for the morning and I love the texture that chia pudding provides. You really cannot go wrong with chia pudding, it always turns out and you can make it into whatever flavor you desire!
  • Almond Milk: I chose to go with almond milk but any milk will do. What I like about almond milk is that it is totally dairy free and offers a light, nutty flavor and creamy base for the chia seeds to absorb and expand, making the pudding deliciously smooth.
  • Vegan Yogurt: Adds creaminess and a probiotic boost, enhancing the texture and nutritional profile of the pudding. It’s perfect for layering and will take on any colour you add to it. Keep vegan yogurt close by because it’s perfect for any kitchen adventure.
  • Maple Syrup: A natural sweetener that gives the pudding a subtle, caramel-like sweetness without overwhelming the delicate strawberry flavor.
  • Strawberry Powder & Pink Pitaya Powder: These powders not only provide a vibrant pink hue and a boost of antioxidants but also infuse the pudding with a sweet, fruity flavor that’s irresistibly Valentine’s themed. How to Store Strawberry Chia Pudding

Storing your strawberry chia pudding is a breeze, making it the perfect option for busy mornings or when you need a quick and nutritious snack. If you find yourself with leftovers or if you’re big on meal prep, simply cover your chia pudding pots or transfer the pudding to an airtight container and refrigerate. Properly stored, your strawberry chia pudding will keep fresh and delicious for up to 5 days. I’ve been known to make large batches of chia pudding and just serve out what I want at that moment, add my desired toppings and then add the remaining back into the fridge. Sometimes I put a spoonful into my smoothie and sometimes if I’m feeling snacky I will just take a spoonful with a dollop of maple or jam. I love how well it keeps in the fridge. The chia seeds will continue to absorb the liquid, so the pudding will thicken further, enhancing its creamy texture. If the pudding thickens more than you’d like, just stir in a little extra almond milk before serving to reach your desired consistency.

Valentine Strawberry Chia Pudding Pots

Show your valentine or you GALentine bestie you love them with these ADORABLE and delicious chia pots! Perfect for a v-day breakfast or galentines brunch gathering! Simple, nutritious and pinkalicious. These pots are a must try this valentines (and shhh all year round too!) Bursting with superfoods, omega rich chia, plant protein, and the cutest lil fresh strawberry hearts, these are the ultimate breakfast and a complete pink hued valentines showstopper. Equipment

  • fridge, mason jars, heart cutout slicing tool All in my shop

Ingredients
  

  • 4 tbsp chia seeds divided
  • 1 cup almond milk divided
  • ½ cup vegan yogurt divided
  • 2 tbsp maple syrup divided
  • 4 tsp strawberry powder divided
  • 2 tsp pink pitaya powder divided
  • fresh strawberry hearts
  • extra yogurt for serving

Instructions
 

  • Grab too small serving jars. To each add 2 tbs chia seeds, 1/2 cup almond milk, 1/4 cup vegan yogurt, 1 Tbs maple syrup, 2 tsp strawberry powder, and 1 tsp pink pitaya powder.
  • Stir each pot until the ingredients are thoroughly combined.
  • Cover, and set aside in the fridge to chill for at least 1 hour.
  • Once the chia is set, top with more vegan yogurt and fresh strawberry hearts.

Notes

**to make the strawberry hearts. Use a fruit shape cutter (I have my favorite available in my shop) and just slice a fresh strawberry in half then place the cutter into the center 🙂
**if the chia mix doesn’t mix easily. Use a whisk to remove any lumps.
**feel free to use any plant milk of choice.
