Picture this: a luscious bowl that marries the creaminess of oats with the vibrant pop of superfood-infused yogurt. It’s a balanced symphony of flavors and textures that will keep you excited about breakfast every single day. We all know breakfast is the fuel that powers our day, and why not make it an explosion of deliciousness that’s also packed with goodness?

What you will need:

  • OATS: You guys! I just have too much fun with these lil beauts. Oats are just my favorite. My favey way to fuel my body in the mornings and also so fun to create with. 
  • PLANT MILK: making this bowl super creamy. I chose flax milk. Any plant milk of choice can be used. 
  • CHIA SEEDS: boosting our brekkie with some natural plant protein. These wonder seeds also provide the most beautiful thick texture. They are a great choice for overnight oats. 
  • element is maple syrup in this recipe. It’s natural. And that  very distinctions maple flavor lends itself so well to oats! 
  • DARK CHOCOLATE CHIPS: this are optional. But boyyyy do dark choc chips marry so well with the raspberry in the yogurt! If you get bight cocoa dark choc they also have health benefits. Packing in a lot of iron and vitamins. You could also use cacao nibs. Or omit completely 
  • PLANT BASED YOGURT: is our beautiful bright topping. I opted for plant based green yogurt. There are some amazing creamy and delicious options out there now! 
  • RASPBERRY POWDER: here’s our beautiful color!!!! I loveee finding new a fun ways to add healthy color. And raspberry powder is incredible!! Keeping all of the nutritional value it adds Instant color and dreamy rasberry flavor. If you can’t find raspberry powder. You could easily just mash up some fresh rasberry with the yogurt. 
  • POMEGRANATE SEEDS: the sweet pop we need but didn’t know we needed! Haha pomegranate is such an amazing fruit. One of the few that you willingly eat it’s seeds. They are brimming with fiber and their sweet and slightly tart flavor are so fun texturally and nutritionally. Extremely vitamin rich. These beauties are a must try. 
  • BEET DUSTED COCONUT: today I used some beet dusted coconut I already had batched in my cupboard! A fun way to add some color and even more health benefits. To make. Simple combine 1 tsp beet powder to one cup shredded coconut. The sinply store in an airtight container or ziplock in the cupboard. 
  • STRAWBERRY GRANOLA: I just happened to have stumbled a cross a fun strawberry granola. But any choice of granola works. Or even your favorite cereal! We want that delicious crunch b
  • PISTACHIO NUTS: adding healthy fats protein and a beauttttt earthy green color. I love pistachios. If you don’t have any on hand. Use any nut of your choosing. 
  • SUNFLOWER SEEDS: my favorite lil snack. I add them to atleast one meal a day. They are mild in flavor and are a perfect crunchy texture bonus. They also contain iron and protein.

Raspberry Beet Brekkie Bowl

Starting your day with the yummiest POW! All the textures. Crunchy, creamy, satisfying and flavorful!! Breakfast is one of my favorites because it sets you up for the whole day. Eating nutritious and delicious HAPPY food fuels your body and you mind for the best day possible. This amazing brekkie Layers oats and the most fun and vibrant superfood yogurt and is topped with pomegranate pops and so many fun crunchy yums! Perfectly balanced and just so fun to make and eat. Let’s get our brekky on !

Equipment

  • mixing bowl

Ingredients
  

  • ¾ cup oats
  • cups plant milk
  • 1 tbs chia seeds
  • 1 tbs maple syrup
  • 1 tbs dark chocolate chips
  • ¾ cup plant based yogurt
  • 1 tbs raspberry powder
  • pomegranate seeds
  • coconut dusted in beet powder
  • strawberry granola
  • pistachio nuts chopped
  • sunflower seeds

Instructions
 

  • Combine oats, plant milk, chia choc chips and maple syrup in a bowl. Mix thoroughly to combine. Cover and refrigerate for 1/2 hr
  • Combine yogurt and beet powder in a bowl. Mix until well combined

Notes

Top oats with yogurt and top with all those yummy toppings!!
