Pumpkin season may have come and gone but does the craving for all things pumpkin ever really disappear? Who says it has to be fall to enjoy pumpkin? After all it has so many benefits and we all wait for pumpkin spice season for like 11 months out of the year so I thought “Let’s enjoy the things we love WHENEVER we want them!” This snack is so easy that you’ll be wondering about all the other ways to make them (which I will share with you!) These Pumpkin Protein Energy Balls are a snack that’s nutritious, no-bake, packed with protein, and brimming with pumpkin flavour. Whether you’re looking for a post-workout snack, a meal prep-friendly option, or just a healthy treat, these energy bites have got you covered.

All the Necessary Ingredients These Pumpkin Protein Energy Balls

  • OWYN Chocolate and Vanilla Protein Powders: This protein powder is a go-to for me because it always provides a clean, plant-based protein and it includes probiotics for gut health.
  • Gluten-Free Quick Cooking Oats: A great source of fiber and energy-sustaining carbohydrates, choosing a certified gluten free oat is only necessary if it’s your preference, any quick cooking oat will do.
  • Creamy Unsweetened Peanut Butter: You know I love me some healthy fats and proteins and peanut butter is one of my favorite ways to get them. You can use any nut butter of your preference but I think peanut goes nicely with the rest of the ingredients.
  • Pumpkin Purée: The most important ingredient of this recipe! Loaded with vitamins, minerals, and a smooth, creamy flavour, pumpkin puree is a great way to use pumpkin in any recipe.
  • Maple Syrup: A natural sweetener adding just the right amount of sweetness.
  • Chia Seeds: Packed with omega-3 fatty acids and fiber.
  • Pumpkin Seeds: A crunchy source of nutrients and protein.
  • Vegan Mini Chocolate Chips or Cocoa Nibs: For a touch of chocolatey indulgence and the perfect amount of crunch.
  • Vanilla and Cinnamon: Add aromatic flavours that complement the pumpkin making things a bit more decadent.

Creating these Vegan Energy Balls

This is honestly the easiest recipe ever and I LOVE making vegan energy balls in a variety of flavors! Literally ALL you need to do is mix all ingredients in one bowl and then divide the batch based on which protein powders you feel like creating. Variety is a big amount of the fun which is why I typically split the batter in half and then add chocolate protein to one bowl and vanilla to the other. After that, you mix one more time and do the most fun part which is to get your hands a little messy and continue the process of scooping and rolling! After that let these bites set in the fridge and in no time, you’ve got a batch of yummy, protein-packed snacks!

I truly believe that you can work towards eating more healthy in small ways by doing things like creating snacks like this and keeping them on hand. Share them with your family or keep them all to yourself; having a high protein snack on hand is always a good thing!

A Few Special Notes

Feel free to swap out peanut butter for any nut, chickpea, or seed butter, especially if you have allergies. And while I adore OWYN protein for its clean ingredients and added greens, feel free to use your preferred protein powder.

Pumpkin Protein Energy Bites

I LOVE a no bake sweet treat! But I love a healthy high protein, refined sugar free, superfood filled sweet treat even more!!! These pumpkin protein energy bites are the ultimate post workout snack, perfect for meal prep and a great swap for those mid afternoon sugar cravings. Healthy fats, omega 3s, and plant protein, all combined with a smooth and creamy pumpkin flavor. These bites are not only delicious but a great nutrient dense snack that’s a perfect options for the whole family. Ready in just minutes. These are sure to be your new go to snack!

Ingredients
  

  • 1 scoop OWYN chocolate protein powder
  • 1 scoop OWYN vanilla protein power
  • cup gluten free quick cooking oats
  • ¾ cup creamy unsweetened peanut butter
  • ¼ cup pumpkin purée
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 2 tbsp vegan mini chocolate chips or cocoa nibs
  • 1 tsp vanilla
  • 1 tsp cinnamon

Instructions
 

  • In a medium sized bowl combine all ingredients except for the protein powders and stir with a wooden spoon to combine.
  • Separate the batter into two equal portions. Then add the chocolate OWYN protein powder to one and the OWYN smooth vanilla protein powder to the other.
  • scoop tablespoons to portion out mixture and roll into balls using your hands.
  • Store in an airtight container in the fridge for a week or freeze for longer. (Makes 24 balls)

Notes

Feel free to sub the peanut butter for any nut butter of choice or chickpea or seed butter of choice for those with allergies
Owyn plant based protein is my absolute favorite. It has clean ingredients, and has greens blend and includes probiotics. But of course feel free to use protein of choice
