Blue Magic Breakfast Bowl

🎶 “I’m blue da ba dee da ba da!” 🎶 Remember that catchy tune? Well, we’re taking that vibrant blue energy and infusing it into your morning routine with the whimsical Blue Magic Breakfast Bowl!

When you’re seeking a colorful and refreshing start to your day, this bowl is here to grant your wish. Packed with nutrient-rich ingredients, this breakfast is a true celebration of flavors, textures, and healthfulness.

Step into your day with the electrifying hue of blue spirulina and a palette of natural goodness. This bowl is not only a feast for the eyes but also a burst of energy and vitality. Whether you’re craving a taste of the tropics or simply want a nourishing and delightful morning ritual, the Blue Magic Breakfast Bowl has got you covered.

What you will need:

  • OATS: Yayyyy for oats! There’s not a day that goes by where I don’t include oats into my meals. They are amazing ore and post workout. They satisfy you for longer. Give you energy and can lower cholesterol so they are very heart healthy. They are the perfect blank canvas to get creative too! I used old fashioned oats today. Gf options will also work.
  • MASHED BANANA: Adds fiber, sweetness, thick texture and a wack of essential minerals. They are amazing with oats and are a marriage made in heaven with vanilla. Just mash roughly with a fork before adding.  
  • GROUND FLAX: is a staple in my world. I buy ground as it not only easily combines and mixes with oats. It is more easily digested that flax seeds. Ground flax is a must if you struggle with digestive issues. Giving you the best boost of fiber out there! 
  • PLANT BASED YOGURT: I opted for vegan Greek yogurt. For a protein boost and that rich and creamy texture. There are some amazing options out there! Coconut yogurt would also be delicious. You’re welcome to use any yogurt of choice.
  • CHIA SEEDS: are not only packed with protein and omega 3 fatty acids. They bind overnight oats amazingly. As you add liquid to them. They expand to create an amazing pudding like texture. Giving these oats a delicious thick texture. 
  • BLUE SPIRULINA POWDER: yessss another blue beauty made with all natural superfood color! If you’ve seen my recipes you’ll know my absolute adoration for blue spirulina. This blue algae is not as scary as it sounds. Mild in flavor and bright beautiful blue. It’s actually full of protein and vitamins and minerals! Throw away those food dyes and invest insimetging that’s so fun and healthy! 
  • GREEN APPLE: I loved using green apple as it’s not as sweet as it’s red sisters. The tart element balances out the creamy yogurt and sweet oats. You could use any apple of choice ofcourse or even pear! 
  • SUNFLOWER SEEDS: brings in some more protein along with healthy fats and a crunch! You could use nuts or pumpkin seeds if you’d like too! 

Combine & Refrigerate

In a mixing bowl, combine oats, plant milk, vanilla, maple syrup, mashed banana, chia seeds, and ground flax. Mix thoroughly, cover the bowl, and refrigerate for 1-2 hours to allow the oats to set.

Mix Spirulina Yogurt

In a separate bowl, mix plant-based yogurt and blue spirulina powder until well combined. Set aside.

Assemble Your Bowl

Once the oats are nicely set, remove the bowl from the fridge. Layer the bowl with the blue spirulina yogurt, creating a beautiful contrast with the oats.

Add Crunchy Toppings

Top your creation with diced green apple, sunflower seeds for a protein boost and a delightful crunch, and a sprinkle of shredded coconut that adds a touch of nuttiness and texture.

Blue Magic Breakfast Bowl

Bringing you a bright blue breakfast to start your day with a colorful BANG!! Silky smooth nutrient packed blue spirulina yogurt. Heart healthy satisfying oats and an apple and sunflower seed CRUNCH! No matter the season I’m always eating like I’m on a tropical island! Come join me!!!!

Equipment

  • mixing bowl

Ingredients
  

INGREDIENTS- serves one

  • ¾ cup oats
  • cup plant milk
  • 1/4¼ tsp vanilla
  • 1 tsp maple syrup
  • ½ banana mashed
  • 1 tbs chia seeds
  • 1 tbs ground flax
  • 1 cup plant based yogurt
  • 1-2 tsp blue spirulina powder

Topping Ingredients

  • ½ green apple diced
  • ¼ cup sunflower seeds
  • shredded coconut

Instructions
 

  • Combine all oats ingredients into a bowl. Mix thoroughly. Cover and refrigerate for 1-2 hrs
  • In a separate bowl mix your yogurt and blue spirulina and set aside.
  • Remove oats from the fridge. Top with your blue yogurt. Apple, sunflower seeds, and coconut.
