Who says birthdays should come only once a year? With my Birthday Cake Overnight Oats, every morning can feel like a special celebration!

This recipe is a fun, vibrant twist on your morning oats, turning them into a party in a bowl. It’s not just delicious; it’s a heartwarming, nutrient-packed way to start your day with a smile. I adore overnight oats, they are the reasons my mornings are often calm, easy and fuss free! I typically make overnight oats 1-3 times a week and it often takes care of me and my partner for a few mornings to come. I love playing with different variations as you will know if you’ve been hanging out here with Claire Bear Bites for long enough and that’s why today I’m bringing to you a celebratory batch of overnight oats that is sure to make you happy and leave your belly satisfied for hours.

The Ingredients You Need To Make My Birthday Cake Overnight Oats

  • Gluten-Free Oats: A fantastic source of fiber and heart-healthy goodness and the main ingredient to any overnight oats!
  • Coconut Milk and Oat Milk: Creamy and dairy-free, providing a rich texture and taste. Add the amount suggested for the best results, I sometimes add a little more the following morning if I’m in the mood for something a little more runny.
  • Chia Seeds: Omega-3-rich seeds that add a nutritional punch and a key component to the texture of these overnight oats.
  • Maple Syrup: A natural sweetener to add just the right amount of sweetness to just about anything.
  • Pink Pitaya Powder: Not only for colour but also for antioxidants and vitamins.
  • Plant-Based Yogurt: Creamy and protein-packed, great for a healthy gut. I love plant based yogurt, it feels cleaner, more fresh and surprisingly lasts long in the refrigerator.
  • Vegan-Friendly Sprinkles: For that quintessential birthday cake charm, their nutritional value is all about adding happiness!
  • Vegan Marshmallows: Fluffy and sweet, perfect for garnish.
  • Plant-Based Whipped Topping: Some may say this is not a necessity but I beg to differ. What birthday cake is complete without a luxurious, creamy finish?

Birthday Cake Overnight Oats

Every day is your birthday!!! With these fun and healthy birthday cake oats! Don’t let your dreams be dreams! Haha you can have you (oats) cake and eat it too! This beyond fun and delicious take on this breakfast staple is a must-try and definitely worth a spot on your breakfast rotation! Heart healthy satisfying oats, with omega 3 rich chia, protein packed yogurt, superfoods and what’s birthday cake without sprinkles!!!

Ingredients
  

  • 1 cup gluten free oats
  • 1 cup coconut milk
  • 1 cup oat milk
  • 1 tbsp chia seeds
  • 1-2 tbsp maple syrup
  • 1 tbsp pink pitaya powder
  • ¾ cup plant based yogurt
  • ¼ cup vegan friendly sprinkles
  • vegan marshmallows for garnish
  • vegan friendly sprinkles for garnish
  • plant based whipped topping for garnish

Instructions
 

  • to a large bowl, add the oats, coconut milk, oat milk, chia seeds, maple syrup, pink pitaya powder, yogurt and sprinkles, then mix thoroughly.
  • Once combined. Cover and refrigerate for at least 1 hour or overnight.
  • When the oats are ready, add to serving bowls and top with extra sprinkles, vegan whipped topping and vegan marshmallows!
  • Enjoy!

Notes

To add a boost of protein. Add 1 scoop of vanilla plant based protein powder
Feel free to top with any fun toppings you have on hand
