Giddy up, my fellow foodies! This isn’t your average bowl; it’s a purple rollercoaster of yummies that could rival the mighty Thanos. Imagine a bowl filled with the most enchanting shades of purple, ready to brighten your universe with a click of your fingers. Yes, it’s that exhilarating!

What sets this bowl apart is its perfect blend of nutrition and flavor. It’s a wholesome winter dish that not only packs a punch in the taste department but also delivers a vibrant visual spectacle. Brace yourselves because it’s time to join the Purple Winter Power Bowl party!

  • RED RICE: I love discovering new fun ingredients to add to nourishing bowls. I decided to switch it up and use red rice instead of white or brown. It’s not only beautiful. It’s packed full of fiber and protein! 
  • PURPLE CAULIFLOWER: One of the most BEAUTIFUL vegetables on the earth. I adore this stunning veggie. It has the same taste and texture of regular cauli but boy is it much more fun for the eyes! You can sub for any cauli you can find. 
  • BEET RANCH: Ranch is one of my all time faves. So of course I had to create a fun, bright and colorful version! It’s rich and creamy and so versatile. Not to mention completely plantbased and dairy free! Store remaining dressing in the fridge. 
  • PURPLE SWEET POTATO: This bright sweet beautiful veggie is even richer in antioxidants than its amazing orange counterpart. This amazing vegetable is rich in fiber and a great source of beta carotene. I often dice and air fry these for meal prep too. If purple isn’t readily available sub for regular sweet potato 

Purple Sweet Potato Prep

Dice your purple sweet potato, drizzle with olive oil, season with salt and pepper, and pop them into the air fryer at 400°F until they’re delightfully crispy. Alternatively, you can oven bake them at 375°F for 25-30 minutes.

Carrot Ribbon Magic

While your potatoes are sizzling away, bring a small pot of water to a boil. Take your purple carrots, ribbon them, and give them a quick blanch for 30 seconds. This step not only makes them pliable for weaving but also enhances their natural sweetness while maintaining that lovely crunch.

Red Rice Perfection

Cook your red rice according to the package instructions, ensuring that it’s fluffy and ready to soak up all the flavors.

Beet Ranch Dressing

In a bowl, combine all the Beet Ranch Dressing ingredients and whisk until thoroughly combined. Feel free to make extra; this dressing is so versatile, you’ll want to keep some on hand for your other salads during the week.

Assembly Time

Once your crispy sweet potatoes are ready, it’s time to assemble your bowl. You can get artsy and lay your ingredients individually in lovely strips across your bowl, or simply toss them together for a delightful mishmash of flavors and textures. Finish with a generous dollop of that vibrant Beet Ranch, and voilà! You’ve just created a dish that’s warm, cool, crunchy, creamy, and bursting with hearty purpley yumness.

Purple Winter Power Bowl with Beet Ranch

GIDDYUPPPP my lil bright n beaut mates!!! It’s a purple rollercoaster of yummies that looks like THANOS only it will BRIGHTEN your universe at the click of your fingers (That’s for my fellow nerds out there) This vibrant winter bowl is jam packed with healthy nutritious goods but doesn’t skimp on flavors, textures and the yummy factor. IT'S A PURPLE PARTY in ya face and you’re all invited!!

Ingredients
  

Ingredients

  • ½ cup red rice cooked
  • ½ purple sweet potato diced
  • ¼ head purple cauliflower finely chopped
  • 1 purple carrot ribboned
  • ½ an endive
  • olive oil
  • salt and pepper to taste

Beet Ranch Dressing Ingredients

  • cup vegan Mayo
  • 1 tsp beetroot powder
  • ¼ tsp garlic powder
  • salt and pepper to taste
  • ¼ - ½ cup non-dairy milk any unsweetened original flavors
  • tsp apple cider vinegar
  • 3 cloves garlic crushed
  • 1 tsp dried dill
  • 1 tsp onion powder
  • ¼ tsp paprika

Instructions
 

  • Let's start by dicing our purple sweet potato and drizzling with olive oil. Salt and pepper and air fry at 400 until crispy. (You can oven bake at 375 for 25-30 mins)
  • While the potatoes are cooking. Bring a small pot of water to a boil, Ribbon your carrot and blanch for 30 secs.
  • (This makes the pliable for weaving and brings out the sweetness but keeping that lovely crunch.
  • Cook your red rice according to package instructions.
  • For the dressing. Simply combine all ingredients into a bowl and whisk until thoroughly combined. (Feel free to halve the recipe. I just like to make enough to keep and use on my other salads during the week) **store any leftover dressing in an airtight container in the fridge.
  • Once Potatoes are cooked. It’s time to assemble. If you feel like getting artsy WID it. Lay your ingredients individually in some lovely strips across your bowl. If not, Chuck those yummies in your bowl. Add a big dollop of beet ranch and bobs ya uncle!!! Warm, cool, crunchy, creamy, hearty purpley yumness. SAVE and make this beaut. You’re gonna love it!
