  • Chicken breasts: I went with a lean cut of chicken breast as it provides this tender cut of meat that is easy to cook. You can use boneless skinless chicken thighs for extra juiciness or any other protein of your preference.
  • Extra virgin olive oil: Essential for adding richness and a luxurious texture to the sauce.
  • Garlic: Freshly chopped for maximum flavor.
  • San Marzano tomatoes: The best choice for a sweet, rich tomato sauce. These are my favorite tomatoes when I am looking to make a tomato sauce from scratch. 
  • Salt and pepper: Essential for balancing flavors!
  • Fresh basil leaves: You could use dried but fresh basil is so bright and aromatic that it gives the sauce an aromatic kick.
  • Parmigiano Reggiano: A must-have for any pasta (in my opinion) as it gives the perfect salty finish.

Which Cut of Chicken Should I Use?

For this chicken pomodoro pasta, you can use either chicken breasts or boneless, skinless chicken thighs, depending on your preference. Chicken breasts are lean and cook quickly, making them a great option for a lighter meal. Chicken thighs offer more tenderness and a richer flavor, making the dish even more indulgent. If you’re short on time, shredded rotisserie chicken is an easy alternative that still delivers on taste and protein. If you want to make this vegetarian omit chicken all together and swap it with your preferred protein!

How to Make Gnocchi Chicken Pomodoro

Cook the Chicken

Heat olive oil in a large skillet over medium heat. Add the chicken breast slices and cook until golden brown on both sides. Remove from the pan and set aside.

Make the Pomodoro Sauce

In the same pan, add garlic and sauté until fragrant. Pour in the San Marzano tomatoes and season with salt and pepper. Let it simmer for 10 minutes, stirring occasionally.

Cook the Gnocchi

While the sauce is simmering, cook the gnocchi in salted water according to package instructions. Drain and set aside.

Combine Everything

Add the gnocchi and cooked chicken back into the skillet with the Pomodoro sauce. Stir in fresh basil leaves and let everything warm together for a minute.

Equipment

  • Stove, Large skillet/pan, Saucepan, Strainer,

Ingredients
  

  • 9oz pack potato gnocchi
  • 3 tbsp extra virgin olive oil
  • 2 chicken breasts
  • 1 garlic clove minced
  • 14oz can San Marzano tomatoes peeled in juice or crushed
  • salt and pepper to taste
  • fresh basil thinly sliced
  • 2 tbsp Parmigiano Reggiano cheese grated

Instructions
 

  • Slice each chicken breast into about six thin strips.
  • Warm 2 tablespoons of oil in a large non-reactive pan over medium heat; add chicken strips and cook until golden on each side, turning once (they should reach an internal temperature of 160 °F.)
  • Remove chicken strips from pan with kitchen tongs and set aside.
  • Add the garlic and remaining tablespoon of olive oil to the pan and cook for a minute over medium heat. Do not allow to brown. Add the San Marzano tomatoes. Stir and cook for 10 minutes over low heat, keeping a steady simmer.
  • Continue to stir often with a wooden spoon, breaking up the tomatoes as you mix. Season with salt and pepper to taste.
  • When sauce is almost ready, cook gnocchi according to package.
  • Drain gnocchi and place in the pan with the tomato sauce. Add the basil leaves, and cooked chicken strips and warm on low heat for a few seconds, stirring
  • gently to blend all the flavors.
  • Transfer to a serving platter or individual plates, making sure to distribute the chicken strips evenly.
  • Sprinkle with grated Parmigiano Reggiano cheese and serve immediately. Enjoy!
