Today we’re whipping up a dish that’s as comforting as it is delightful – my One Pot Creamy Sweet Pea Pasta! Let’s take simple ingredients and transform them into a dish that is explosive in flavor and deeply satisfying. Perfect for those evenings when you want a meal that’s both easy to prepare and clean up afterward, this pasta promises to be a hit among all family members, vegans and non-vegans alike.

Ingredients for Creamy Pea Pasta

  • Farfalle Pasta: The perfect shape to hold onto our creamy sauce, adding a delightful texture to every bite.
  • Extra-Virgin Olive Oil: Infuses the dish with its rich flavor.
  • Garlic: Enhances the overall taste profile of the pasta.
  • White Onion: Brings a subtle sweetness and depth to the dish.
  • Vegetable Broth: The cooking liquid that not only cooks the pasta but also forms the base of our creamy sauce.

How to Make Creamy Pea Pasta

Whipping up a bowl of this Creamy Pea Pasta is as easy as it is delicious, making dinner time a breeze with a touch of gourmet flair. Begin by warming some olive oil in a large saucepan or pot over medium heat, toss in the garlic and onion, and sautée until they’re just softened—a process that infuses the oil with a base layer of flavor. Next, you’ll want to add in the farfalle pasta along with a generous pour of vegetable broth. Crank up the heat to medium/high and let the mixture come to a boil, stirring every so often. About six minutes in, when the pasta has reached that perfect al dente texture, it’s time to introduce the asparagus, peas, and snap peas! 

After a minute or two add in some vegan cream cheese for richness, a sprinkle of fresh lemon zest for a hint of citrus brightness, and a pinch of salt to bring all the flavors into harmony. Mix everything together until the sauce clings lovingly to each piece of pasta, transforming into a creamy, dreamy pan of saucy happiness. Take it off the heat, ladle the pasta into bowls, and garnish each serving with fresh flat leaf parsley for an added pop of color and freshness. 

What is the Best Way to Reheat This Pasta

One Pot Creamy Sweet Pea Pasta

Dinner has never been easier, quicker, or more DELICIOUS!! Pasta! A true love dinner match made in heaven! But no more boring spaghetti bolognese! This one pot wonder will be on your dinner table in 35 minutes and will wow the whole family. A creamy rich sauce, fresh vibrant vegetables, full of bright spring flavors and all made in ONE POT! (Hello easy cleanup) It’s so much easier than you think to create delicious, interesting and mind fun meals! So grab a pot and let’s get cooking!!

Equipment

  • stove, large pot

Ingredients
  

  • 10 ounces farfalle pasta I used Barilla
  • 2 tbsp extra-virgin olive oil
  • 3 cloves garlic thinly sliced
  • ¼ large white onion finely chopped
  • cups vegetable broth
  • 1 cup asparagus cut on a bias
  • 1 cup peas thawed from frozen
  • ¾ cup snow peas small cut on a bias
  • 6 oz vegan cream cheese can be subbed for regular cream cheese
  • ½ tsp fresh lemon zest
  • pink salt to taste
  • fresh flat leaf parsley for garnish

Instructions
 

  • In a large saucepan or pot, heat the olive oil over a medium heat.
  • Add the garlic and onion and cook until softened. (About one minute)
  • Next add the Barilla farfalle pasta along with the vegetable broth and bring to a boil over a medium/high heat. Stirring occasionally, for around 6 mins.
  • Once the pasta is al dente, stir in the asparagus, peas and snap peas. Cook for another 2 mins.
  • Next add the vegan cream cheese, lemon zest and salt to taste.
  • Stir until thoroughly combined and a beautiful thick and creamy sauce has formed.
  • Remove from the heat, spoon into serving bowls and garnish with fresh flat leaf parsley.

Notes

** I created this dish with farfalle shaped pasta. I can’t confirm it would work with any other shaped pasta.
** if asparagus and sweet peas aren’t your jam. Feel free to substitute for green veggies of choice!
**this dish is 100% plant based. But like all my recipes can be easily adapted to include dairy versions of all ingredients and a protein of choice 🙂
