Sometimes you just want all the best parts of a cheeseburger without worrying about the bun. That’s exactly why this cheeseburger bowl has become one of my favorite easy dinners.
It has everything you’d expect from your favorite burger. There’s juicy seasoned ground beef, plenty of melted cheese, crisp lettuce, ripe tomatoes, creamy avocado, crunchy pickles, crispy tater tots, and the most delicious homemade burger sauce. Every bite is loaded with flavor, texture, and plenty of cheesy goodness.
Better yet, this recipe comes together in around 30 minutes, making it perfect for busy weeknights, meal prep, or whenever you’re craving comfort food.
You only need a handful of simple ingredients to recreate all the flavors of a classic cheeseburger—without the bun.
I like using lean ground beef because it stays juicy while still browning beautifully. It creates the perfect hearty base for the bowl.
Instead of simply sprinkling cheese over the top, I melt grated Gouda directly into the beef. It creates an incredibly rich, creamy texture that coats every bite.
Crispy tater tots add that irresistible fast-food feel while soaking up all of the cheesy beef and burger sauce. You can easily swap them for fries if that’s what you have on hand.
Fresh shredded lettuce adds plenty of crunch and balances the richness of the beef and cheese.
Juicy baby tomatoes bring freshness and a little sweetness that complements the savory burger flavors.
Thinly sliced red onion adds a little bite and a pop of color.
Creamy avocado makes these bowls even more satisfying while adding a buttery texture.
No cheeseburger is complete without pickles. They add the perfect tangy crunch.
Add all of the burger sauce ingredients to a small bowl. Stir until smooth and well combined, then refrigerate while you prepare the remaining ingredients. This allows the flavors to develop while everything else cooks.
Heat a large skillet over medium-high heat. Add the ground beef, salt, and BBQ seasoning. Cook, breaking the beef apart as it browns, until it is fully cooked and no longer pink.
Reduce the heat to low and stir the grated Gouda through the beef. Continue stirring until the cheese has completely melted and coats the beef in a rich, cheesy sauce.
While the beef is cooking, air fry the tater tots or fries according to the package instructions until golden brown and crispy.
Divide the shredded lettuce between serving bowls. Add the crispy tater tots, tomatoes, red onion, avocado, pickles, and generous spoonfuls of the cheesy beef mixture.
Drizzle generously with the homemade burger sauce and finish with an extra sprinkle of grated cheese if desired.
Serve immediately and enjoy.
One of the best things about this cheeseburger bowl recipe is how easy it is to customize.

You can also swap the tater tots for roasted potatoes, sweet potato fries, or leave them out completely for a lighter burger bowl.
Store the beef, toppings, burger sauce, and tater tots separately in airtight containers.
The beef will keep for up to 4 days in the refrigerator. Reheat gently before serving.
For the freshest texture, assemble the bowls just before eating.
Yes. Prepare all of the ingredients in advance and store them separately. Assemble just before serving for the freshest results.
Gouda melts beautifully and creates an extra creamy beef mixture, but cheddar, Colby Jack, Monterey Jack, or American cheese all work well.
Absolutely. Simply skip the tater tots or fries and add extra lettuce, avocado, or your favorite low-carb vegetables.
Yes. Ground turkey or ground chicken both make great substitutes for beef if you’re looking for a lighter option.
