Earth Chia Pudding

We have the whole world in our hands! and now literally! This oh so fun earth inspired breakfast bowl is not only delicious and a smile to the eyes it promotes loving the earth both visually and with its nourishing ingredients. Protect and love our earth at all costs. Lead with love. Lead with kindness. Shopping and cooking sustainably is now more important than ever. I LOVE finding products and companies that are striving to make a better planet for us all.

Ingredients
  

  • 6 tbsp chia seeds
  • 1 cup nut milk I used @whatiffoods
  • ½ cup coconut milk
  • 6 tbsp coconut yogurt
  • 1 tbsp blue spirulina
  • 4 tbsp maple syrup

Earth Topping Ingredients

  • 2 tbsp Greek style vegan yogurt
  • ½ tsp matcha powder

Instructions
 

  • Simply combine all ingredients into a bowl and whisk until thoroughly combined.
  • Let sit for 5 mins. Then whisk again to ensure all lumps are removed.
  • Pour into a container or Individual portions for prep. Cover and chill for 2 hours minimum.
  • Once ready. Remove from the fridge and add a portion into a small bowl.
  • For serving. In a separate bowl. Mix yogurt and matcha powder and using a spoon add small amounts of yogurt on top of the pudding to shape as countries. Enjoy!
