With many of us seeking healthier alternatives to our favorite treats, it’s easy to feel overwhelmed by the countless ‘healthy’ recipes out there. Yet, this one stands out, not just for its taste but for its health benefits too.

What you will need for these Chocolate Peanut Butter Protein Muffins

  • BANANAS: Are one of the best bases for muffins and cakes. They add not only natural sweetness but they instantly give muffins a moist and dense texture. Which is essential when baking with protein powder. As it easily dries out baked goods. Be sure to use brown, spotting over ripe bananas for the best texture and flavor. Which is great since I know we all end up with those bananas! Now you have a great use for them!!
  • OAT FLOUR: Using oat flour is perfect for my gluten free peeps out there. You could sub for almond flour if needed. 
  • GROUND FLAX: Using flax yo make a vegan ‘egg substitute is amazing and adds healthy fiber to the muffins. You simply add 1 tbsp of ground flax with 3 tablespoons of water and mix well before adding to the batter ! 
  • MAPLE SYRUP: The perfect natural sweetener in baking. If you’re not vegan, you could use honey. But stick to natural. It keeps these muffins refined sugar free and healthy! 
  • COCONUT OIL: Using healthy oils to cook and bake with is such an easy swap and you’ll only reap benefits. I chose coconut oil for this recipe. Which adds a lovely tropical flavor with the banana. You could sub for avocado oil. 
  • ALMOND MILK: Adding just an extra splash of moisture. You can use any nut milk you’d like. 
  • VEGAN CHOCOLATE PROTEIN POWDER: Bring on the choc!! This will bring on that beautiful chocolate flavor that marries so perfectly with the banana and peanut butter! I always choose KOS vegan superfood protein powders, especially when baking. They are so clean and full of superfoods. Boosting nutritional value and the taste in my opinion is unrivaled. Just be sure to choose a protein powder you like the taste of as the flavor will be dominant 🙂 
  • PEANUT BUTTER: Creamy rich pb is the ultimate protein and flavor boost. It also adds a dense texture. Rich texture to the muffins and pairs so well with dark chocolate. I used smooth peanut butter but feel free to get funky with crunchy! Just be sure you use a natural pb. Without added sugars and preservatives 
  • VEGAN DARK CHOCOLATE CHIPS: Adding that beautiful melt in your mouth pop of chocolate! I used 60% dark chocolate. The HU brand is just amazing!

Chocolate Peanut Butter Protein Muffins

Curbing those ever present sweet cravings, while fueling your body with healthy fats, protein, carbohydrates and electrolytes ready to take on the day. Chocolate and peanut butter is a match made in yummy heaven!Healthy baking doesn’t have to be boring or dull. It’s about simple swaps that don’t change flavor. Ready in just 20 minutes and perfect for meal prep. You’re just a few simple ingredients away from the most delicious healthy muffins there is!

Ingredients
  

  • 1 cup approx. 2 large bananas mashed
  • 1 flax egg 1 tbs ground flax + 3 tbs water
  • ¼ cup maple syrup
  • ¼ cup coconut oil melted
  • ¼ cup almond milk
  • ¾ cup oat flour
  • ½ cup plant based chocolate protein powder I used KOS
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tbs peanut butter
  • ¼ vegan dark chocolate chips

Instructions
 

  • Preheat oven to 350 and prepare a lined or greased muffin tin.
  • In a bowl, mash bananas until smooth.
  • Stir in flax egg, milk, maple syrup peanut butter and coconut oil until combined
  • Add in oat flour, protein powder, baking powder, baking soda. Stir until combined. .
  • Pour batter into cups, filling 3/4 of the way. Do not overfill!
  • Add 6-8 dark chocolate chips ontop of the batter, per muffin. Press in slightly **this avoids any chocolate sticking or burning at the base of the muffin.
  • Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.
