Chocolate Peanut Butter Protein Muffins

- 1 cup approx. 2 large bananas mashed
- 1 flax egg 1 tbs ground flax + 3 tbs water
- ¼ cup maple syrup
- ¼ cup coconut oil melted
- ¾ cup oat flour
- ½ cup plant based chocolate protein powder I used KOS
- 1 tsp baking powder
- 1 tsp baking soda
- 3 tbs peanut butter
- ¼ vegan dark chocolate chips
Preheat oven to 350 and prepare a lined or greased muffin tin.
In a bowl, mash bananas until smooth.
Stir in flax egg, maple syrup peanut butter and coconut oil until combined
Add in oat flour, protein powder, baking powder, baking soda. Stir until combined. .
Pour batter into cups, filling 3/4 of the way. Do not overfill!
Add 6-8 dark chocolate chips ontop of the batter, per muffin. Press in slightly **this avoids any chocolate sticking or burning at the base of the muffin.
Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.
