Adobo Street Corn Mexi-Bowl Ingredients

  • Puravida Foods Adobo Street Corn and Peppers: This premade mix saves time and is packed with delicious Mexican flavors. I found mine at sprouts but if this is not available in your area then grilled corn off the cob will do! Toss it with a bit of adobo seasoning and you should be good to rock!
  • Avocado: Adds a creamy, rich texture to balance the spicy corn. Essential to pretty much any Mexican dish.
  • Quinoa: A healthy base that soaks up all the wonderful flavors, adding fiber and iron. Perfectly gluten free this grain is also high protein and easy to prep in big batches.
  • Iceberg lettuce: Provides a fresh, crunchy contrast to the other ingredients.
  • Extra firm tofu: Pressed, sliced, and air-fried for a crispy, protein-packed addition.
  • Hemp seeds: Adds a nutty flavor and extra protein.
  • Vegan feta cheese: Brings a salty, tangy element to the bowl.
  • Salt and pepper: Add to your personal taste preferences. Enhances the flavors of the whole dish.
  • Olive oil: For cooking the tofu.

Mexican Crema Ingredients

  • Vegan sour cream: The base for our creamy, tangy dressing.
  • Vegan mayo: Adds extra creaminess and richness.
  • Fresh lemon or lime juice: For a zesty kick. Lime is more of a traditional Mexican ingredient but lemon will do.
  • Minced onion: Adds a bit of bite and flavor.
  • Onion powder and salt: Enhances the overall flavor of the crema without being overpowering.

How to Make this Adobo Street Corn Mexi-Bowl

Start by cooking the adobo street corn according to the package directions and set it aside. Next, prepare the quinoa following the package instructions and set it aside as well. For the tofu, press it to remove any excess moisture, slice it, drizzle with olive oil, and air fry at 400°F until golden brown. Once cooked, slice the tofu into triangles and set it aside.

In a bowl, combine all the crema ingredients – vegan sour cream, vegan mayo, lemon or lime juice, minced onion, salt, and onion powder. Whisk until thoroughly combined. To assemble the bowl, lay a bed of iceberg lettuce, then add the cooked quinoa, adobo street corn, avocado slices, air-fried tofu, hemp seeds, and crumbled vegan feta. Drizzle with the creamy Mexican crema and enjoy!

Adobo Street Corn Mexi-Bowl

You guysss! STOP. SAVE. MAKE. DEVOUR. REPEAT!! Cos this is one of the tastiest creations I’ve made and the drool factor is commencing again as I post it! This dish is the ultimate party in your mouth and will be a constant crowd pleaser in your house! Adobo style street corn, salty vegan feta, superfood quinoa, and a gorgeous Mexican inspired crema. LETS GOOOO!!

Ingredients
  

Quinoa Ingredients

  • 1 packet Adobo street corn and peppers I uses Pura vida foods or any Mexican style frozen corn
  • 1 avocado sliced
  • 1 cup quinoa cooked
  • iceberg lettuce
  • 8 oz extra firm tofu
  • 2 tbsp hemp seeds
  • ¼ cup vegan feta cheese crumbled
  • salt and pepper
  • olive oil

Mexican Crema Ingredients

  • ¾ cup vegan Sour Cream
  • ¼ cup vegan Mayo
  • 3 tsp fresh lemon or lime juice
  • 1 tbsp onion minced
  • salt
  • ¼ tsp onion powder

Instructions
 

  • Simply prepare the corn easily according to package directions and set aside.
  • Cook quinoa according to package instructions also
  • For the tofu, press, slice, drizzle with a little olive oil and air fry at 400 till golden brown then slice again into triangles and set aside.
  • For the crema. Add all ingredients into a bowl and whisk until thoroughly combined.
  • Arrange all your ingredients into your bowl and when I tell you you’re about to go to smokey flavorful heaven I mean it!! Must tryyyyou guys!!
