White Chocolate Peanut Butter Cups with Mixed Nuts

- 16 oz vegan white chocolate
- 1 Tbsp coconut oil
- 2/3 cup creamy peanut butter
- 1/2 cup mixed nuts, roughly chopped
Melt the chocolate: Add the white chocolate and coconut oil to a microwave-safe bowl. Microwave in 20–30 second intervals, stirring well between each, until completely smooth and melted.
Make the chocolate shells: Line a muffin pan with paper liners or use a silicone muffin mold. Spoon a layer of melted white chocolate into the bottom of each cup, spreading it slightly up the sides.
Add the peanut butter: Spoon the peanut butter into the center of each chocolate layer, keeping it away from the edges.
Cover with chocolate: Spoon the remaining melted white chocolate over the peanut butter, making sure each cup is completely covered.
Add the nuts: Sprinkle the chopped mixed nuts over the tops while the chocolate is still melted. Gently press them into the chocolate if needed.
Chill: Refrigerate for 1–2 hours, or until the chocolate is completely firm.
Serve: Remove from the liners or molds and enjoy!

- Chocolate: White chocolate can burn easily, so melt it slowly and stir frequently.
