Vegan Egg and Fried Rice

Experience foodie fun with Vegan Egg and Fried Rice. This playful twist on fried egg rice features creamy sour cream, colorful veggies, and flavorful spices. It's a showstopper and flavor bomb rolled into one!

Why be serious when you can have fun with food? 🍳🌟 My cheeky take on fried egg rice is all about celebrating the joy of cooking. This whimsical dish not only explodes with flavors but also features a little magic – my clever sour cream and bell pepper ‘egg’! Let’s put on our art capes and create delicious foodie artworks together!

The ingredients you’ll need:

  • COOKED WHITE RICE: This recipe is the ULTIMATE leftover rice dish! I used some spare rice I had in the fridge. Of course if you don’t have leftover fridge rice haha you can easily just whip up some for the recipe 
  • TOFU: I used extra firm as this has the ‘meatiest’ texture. To tear it, simply drain the liquid by slicing and using a paper towel to absorb most of the liquid then get your hands in there! Tear the tofu slices into little chunks. In the final dish the texture mimics scrambled egg so perfectly! 
  • CARROT: Cos you can’t have fried rice without carrot!!! I peeled and diced fresh carrot but you can absolutely use frozen if preferred 
  • CORN KERNELS: The sweet pop that really makes the flavors sing! I believe sweet with savory is the ultimate umami. I used canned corn kernels
  • PEAS: Fried rice has to have peas right!!! Haha they just make the dish even if we don’t know why. I used frozen peas, thawed for this dish 
  • TURMERIC: This adds so much flavor. Turmeric has the most amazing anti-inflammatory properties so it’s good for the bod too! 
  • CUMMIN: Such a powerhouse flavor used a lot in Indian and Spanish cuisine. It’s distinctive flavor is so perfect 
  • CHILI POWDER: Cos we need a kickkkk. Of Course if you aren’t spicy inclined you can halve the amount or omit entirely 
  • COCONUT SUGAR: Adds the most perfect caramel notes and balances the spice amazingly. Coconut sugar is a great natural source of sweetness 
  • VEGAN SOUR CREAM: Here’s our ‘egg white’  I used vegan. Of Course if you’re not vegan you can use regular. But there are some great options out there! Simply spoon a 1-2 tbs in the middle of your serving and spread outward to mimic an egg white 
  • ORANGE BELL PEPPER: Here’s our yolk!!! I simply cut a circle out of an orange bell pepper and it worked phenomenally!!! Just pop it in the middle of the sour cream egg white! So fun! 

How to make your own vegan egg fried rice:

  1. Heat olive oil in a saucepan, sauté red onion, add torn tofu, garlic, and spices.
  2. Incorporate carrots, corn, peas, and white rice. Stir-fry.
  3. Spoon vegan sour cream to form an ‘egg white’ and place an orange bell pepper ‘yolk’ in the center.
  4. Enjoy your playful, flavorful masterpiece!

Vegan Egg and Fried Rice

LIFE is way too serious not to have fun with food!!! My cheeky take on fried egg rice makes me smile from ear to ear and I hope it does for you too! It is sooo easy to create funny, whimsical, happy food!!! With simple, delicious ingredients this rice not only is a flavor bomb! It’s a showstopper with my tricky lil sour cream and bell pepper ‘egg’ that’s also functional. The creamy sour cream with those smack ya taste bud spices is just magical! So put your art capes on and let’s create some delicious foodie artworks!!!

Ingredients
  

  • 2 cups white rice cooked
  • 2 tbsp olive oil divided
  • 12 oz tofu torn
  • 1 cup carrot diced
  • ¾ cup corn kernels
  • ¾ cup peas
  • 3 cloves garlic crushed
  • ½ red onion diced
  • tsp turmeric
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions
 

  • In a large heated saucepan, add 2 tbsp of olive oil. Add red onion and sauté for 1 minute.
  • Add torn tofu to the pan. Sauté for a further 1 minute. Add your garlic and stir until fragrant. Add your spices. Cook for around one minute.
  • Add carrots, corn and peas. Add white rice to the pan along with the remaining 1 tbsp of olive oil. Stir fry the mixture for a further 5-10 mins. Remove from the heat. Spoon into a bowl(s).
  • With the back of a spoon spread vegan sour cream in the shape of an egg (“egg white”) then place a circular cut piece of orange bell pepper (“yolk”) in the center. Enjoy! And have fun with your food!
