I’ve got a treat that’s not only bursting with flavor but also a vibrant feast for your eyes. If you’ve been following my culinary journey, you know that I’m all about making food fun, cute, and irresistibly delicious.

And today, we’re taking a dive into the world of vibrant and nutritious with my Rainbow Superfruit Smoothie Bowl. Food should be a source of joy, and this recipe is all about bringing that happiness to your breakfast table. So, grab your blender and get ready to create a masterpiece that’s not only delicious but also oh-so-healthy!

In this Rainbow Superfruit Smoothie Bowl, we’re going to celebrate the goodness of fruits in every color of the rainbow.

Think of it as a symphony of flavors and a visual delight that’ll brighten up your morning. We’re blending together the antioxidant-rich blueberries, creamy bananas, and the wholesome goodness of chia seeds for that perfect smoothie bowl texture. Plus, we’ll amp up the protein with a scoop of vanilla plant-based protein to keep you fueled and ready to tackle your day. But that’s not all—wait until you see the colorful fruit toppings that turn this bowl into a work of art! So, let’s get ready to whip up a bowl of pure happiness and health because, in my world, eating well is always a fun and delicious adventure!

Gather your ingredients!

  • SUPERFRUIT FREEZIE: This is completely optional. Feel free to add a splash of fresh juice but I love the icy feel of the pops. They are a no added sugar treat too
  • FROZEN WILD BLUEBERRIES: I chose wild blueberries for the added nutrients but regular frozen blueberries will be just fine too! Shop organic if possible 🙂 
  • BANANA: The best sweet creamy base for smoothies. They create such a perfect thickness for smoothie bowls. The pack of potassium is such a great added bonus. They will also help keep you satisfied for a longer time 
  • CHIA SEEDS: Smoothies are great for enabling so many ingredients to be added. The addition of chia gives a big bite of protein omega 3’s and helps to thicken this smoothie which is essential for smoothie BOWLS
  • VANILLA PLANT BASED PROTEIN: Feel free to sub for any protein you like. The incredible vegan plant protein options are always a go to as they are so gentle on the stomach and have great flavor. I used a pea protein based one 
  • FROZEN MANGO CHUNKS: Sweet, delicious and an amazing tropical addition 
  • PLANT MILK: Smoothies and smoothie bowls all need some liquid to bind and help blend. I used almond milk but feel free to use any milk of choice. 
  • FRESH FRUITS FOR TOPPING: I simply chose any fruits that were in season and looked yummy! I always aim to eat the rainbow so have fun and pick any fruits you like in all the colors of the rainbow! 

Blend the Rainbow Magic

Start your colorful adventure by grabbing your trusty high-speed blender. It’s the magic wand for this culinary masterpiece. To it, add all the star ingredients except for the toppings: the magnificent @deebeesorganics pomegranate/blueberry superfruit organic freezie pop (this is optional but adds icy deliciousness), a cup of wild blueberries (frozen to give that perfect chill), a frozen banana (the creaminess provider), one tablespoon of chia seeds (the secret to that smoothie bowl texture), and don’t forget a scoop of your favorite vanilla plant-based protein for that protein boost. Top it off with a cup of your preferred plant milk.

Blend, Blend, Blend!

Time to work some blender magic! Whiz everything together until you’ve got a velvety smoothie that’s as vibrant as a rainbow. Watch as the colors meld into a delightful symphony. This step is not just about making something delicious; it’s about creating an edible work of art that’s as pleasing to the eyes as it is to your taste buds. Once your smoothie is smooth as silk, pour it into a serving bowl.

Now, here’s where the real fun begins. It’s time to bring on the rainbow! Grab a wooden spoon and start layering your beautiful smoothie with a mix of fresh fruits in all the colors of the rainbow. Dice up some green grapes, finely chop mango, slice a thin orange (including the rind if you’re feeling adventurous), sprinkle some pomegranate seeds, finely dice strawberries, and scatter a handful of blueberries. Finish it all off with a squeeze of fresh lemon juice to brighten those flavors. Your smoothie bowl is now a vibrant masterpiece that’s as much a feast for the eyes as it is for your taste buds. Ingredients

  • 1 pomegranate/blueberry superfruit I used @deebeesorganics organic frezzie pop
  • 1 cup wild blueberries frozen
  • 1 banana frozen
  • 1 tbsp chia seeds
  • 1 scoop vanilla plant based protein
  • ¾ cup mango chunks frozen
  • 1 cup plant milk

Topping Ingredients

  • green grapes small dice
  • mango chopped finely
  • orange sliced very finely **with rind, optional
  • pomegranate
  • strawberry fine dice
  • blueberries whole
  • squeeze of fresh lemon juice

Instructions
 

  • To a high speed blender, add all ingredients aside from the toppings and blend until smooth.
  • Simply add to a bowl and top with all those beautiful rainbow fruits. Enjoy!
