Move over Taco Tuesday, there’s a new icon in town – the Jackfruit Burrito Bowl! Picture this: perfectly spiced jackfruit, a rainbow of fresh veggies, and zesty Mexican flavors dancing together in a bowl. It’s a party for your taste buds, and everyone’s invited!

What you will need for your own burrito bowl:

  • Jackfruit: The Sensational Standout Let’s start with the star of the show, jackfruit. If you haven’t tried it yet, you’re in for a treat! This incredible fruit has a texture reminiscent of pulled pork, making it an ideal plant-based substitute. While it may not match meat in protein content, it’s loaded with antioxidants and carotenoids that protect your cells and packs a vitamin A punch. When using canned jackfruit, be sure to rinse it thoroughly to remove all the brine, leaving behind only the delectable fruit.
  • Mexican Spice Blend: A Flavor Explosion Now, let’s talk about the spice blend that elevates this bowl to greatness. While I prefer to make my own Mexican spice blend (which I’ll share separately because it’s just that good), you can always opt for a store-bought mix to save time. Whichever you choose, these spices infuse every bite with the bold, warm, and earthy flavors of Mexico.
  • Black Beans: Nutritional Powerhouses No Mexican dish is complete without black beans, and for a good reason. These little legumes are nutritional powerhouses, bursting with plant-based protein, fiber, and antioxidants. They play a key role in managing blood pressure, sugar, and cholesterol levels while adding a rich, hearty flavor to your meal.
  • Refreshingly Crunchy Veggies For the toppings, I’ve gone with classic burrito staples, including red baby bell peppers, fresh cilantro, and creamy avocado. However, one of the beauties of this recipe is its versatility. You can add or omit any of your favorite veggies to create your perfect bowl. After all, it’s your flavor fiesta!

To bring this culinary fiesta to life, start by preparing the jackfruit. Combine a tantalizing mix of spices with olive oil and a splash of water to create a flavorful paste. Coat the drained jackfruit with this aromatic blend and stir-fry it in a hot pan until the spices are cooked and fragrant. Then, set it aside in a bowl, ready for assembly.

Jackfruit Burrito Bowl

HAPPY BURRITO BOWL EVERY DAY! !! move over taco Tuesday there’s a new iconic day in town!!! Burrito bowl any day! Is that a thing? Cos I’m making it a thing! All the burrito flavors and amazing Mexican style ingredients! Perfectly spiced jackfruit (if you haven’t tried jackfruit yet? You’re in for a treat!!!!) and all the trimmings. Issa party in ya mouth and we’re all invited… or something like that,let’s get ya burrito ONNNN.

Equipment

  • stove

Ingredients
  

  • 1 can jackfruit drained, pulled apart
  • ½ can corn
  • ½ can black beans
  • 1 large white onion
  • 2 cloves garlic crushed
  • 1 cup red baby bell pepper
  • handful of fresh cilantro
  • vegan sour cream
  • squeeze of fresh lime
  • iceberg lettuce

Jackfruit Spice Mix

  • 1 tsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper

Instructions
 

  • Combine all spices in a bowl and stir in a lil olive oil and a splash of water to form a paste. Add your drained jackfruit and mix to cover completely.
  • Once coated. Add the jackfruit to a hot pan and stir fry until the spices are cooked and fragrant. Then remove from heat and transfer to a bowl ready for serving.
  • In the same pan. Add a drizzle of oil, the chopped onion and garlic and sauté on a high heat till slightly caramelized. Then remove from heat.
  • To serve, lay a bead of iceberg lettuce into a bowl and top with the jackfruit, onions, beans, corn, bell peppers, fresh cilantro and half an avo. Add a squeeze of fresh lime juice and a dollop of vegan sour cream ! ENJOY!!!

Feel free to use any premade store bought mix also!
