These vegan babies are naturally dyed green, filled with sweet goodness and guaranteed to have everyone grabbing seconds (might I suggest double batches!?) Get ready to whip up some holiday magic in the kitchen with these Grinch Cookies! A playful nod to everyone’s favorite Christmas grump, transformed into chewy, sweet, and festively green cookies. Perfect for baking with kids or adding a touch of fun to your holiday dessert spread, these cookies are naughty, nice, and a grinchy Christmas delight! 

The Wholesome Ingredients that Make Up these Deliciously Vegan Grinch Cookies

  • Vegan Butter: For that classic cookie texture without any dairy any vegan butter will do!
  • Sugar: Adds the much desired sweetness to these cookies – I suggest granulated Brown Sugar and/or Coconut Sugar
  • Natural Green Food Dye: Gives these cookies their iconic Grinch-green color, packed with vitamins from spinach.
  • Matcha Powder: A key player to making these cookies as festive as possible; they deepen the green color and add a subtle earthiness to the overall flavor.
  • Vegan White Chocolate Chips: Creamy, sweet morsels for a delightful texture.
  • Red Heart-Shaped Sprinkles/Candies: A sweet vegan-friendly touch that adds to the Grinch theme.
  • Vanilla Extract
  • All-Purpose Flour
  • Baking Soda & Baking Powder
  • Salt

Grinch Cookies

CANT STOP grinching. Won’t stop grinching!! 
These FUN holiday cookies are a hit for this festive season! Added chewy AND sweet. These are naughty and nice and Christmas in every bite! 
Sure to turn any grinch into a Christmas loving elf! Bringing the nostalgia of fresh baked sugar cookies with the most fun festive twist, these are  completely plantbased and a must try for the holidays!

Ingredients
  

Ingredients

  • ½ cup vegan butter softened
  • ¾ cup granulated sugar (extra for rolling) 
  • tbsp brown sugar or coconut sugar tightly packed
  • a few drops of a natural store bought food dye mixed with 1/4 cup almond milk
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 tbsp matcha powder
  • ¾ cup vegan white chocolate chips
  • vegan friendly red heart shaped sprinkles/candies

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Grease, or Line 2 large baking sheets with parchment paper
  • In a large mixing bowl, add vegan butter, granulated sugar, and brown sugar/coconut sugar and beat with a hand mixer until light and fluffy (around 3 mins) 
  • Next, add the natural green food dye mix and vanilla extract, then cream together once more just to combine.
  • To that add the all-purpose flour, baking soda, baking powder, matcha powder and salt to the bowl. Mix together until the flour is evenly incorporated.
  • Pour in the white vegan choc chips and red heart shaped candies and mix through.
  • Scoop heaping tbs of the mixture and roll into balls, roll the balls in granulated sugar then place on the baking sheet.
  • Bake the cookies on the middle rack in the oven, one tray at a time, for 10-12 minutes. The perfect cookie will have edges that are firming but the center will still look slightly underbaked. This will ensure you have the perfect chewy consistency.
  • Remove the cookies from the oven. Allow one minute to cool ever so slightly on the tray before transferring to a cooling rack.
  • Then. DEVOUR and enjoy these festive and fun holiday cookies!!! 

Notes

** for a flat cookie, reduce baking soda and baking powder to a 1/8 tsp each or omit entirely. 
** add as much or as little natural food dye as you’d like to achieve the shade of green that you would like best. 
** if you like things on the sweeter side add an extra 1/4 cup of vegan white chocolate chips

  1. I have made these cookies, and they are very very good… I didn’t have quite a full tablespoon of Matcha, but I made them anyways lol. They’re crunchy and a little chewy the perfect cookie.!!
