What you will need for this bowl:

  • QUINOA: a superfood for a reason. Full of iron and protein and keeps you satisfied. Has such a wonderful texture. It’s a must try 
  • VEGETABLE BROTH: quinoa is like a sponge! So cooking it with veggie broth gives it instant flavor! Nothing worse than bland quinoa! 
  • SPIRULINA POWDER: using this for health benefits and that color is just magic. I love adding something healthy into recipes if I can. Without sacrificing flavor. 
  • JACKFRUIT: a vegans dream! Jackfruit has the most amazing ‘meaty’ texture 
  • FIREBALL BASIL POWDER: I found an amazing basil powder but feel free to use any stick cube or flavored salt 
  • COCONUT SUGAR: a great natural sweetness to counteract the spicy

Fireball Basil Jackfruit Quinoa Bowl

BANG BOOM BLAM This bowl slappps my friends! Delishy sweet Spicey pulled jackfruit and big bright beautiful GREEN quinoa!!! Yep! This bowl not only tastes brill it’s a superfood bowl too!! I’m always sneaking any healthy boost I can to my yummies and my beautiful quinoa is stacked with spirulina! It adds no aftertaste at all and you’ve snuck in a superfood green on top of all the fresh veg! GAMECHANGER! And Perfect for parents trying to sneak in some of those much needed healthy benefits and the kiddies will adore fun color! I devoured this whole bowl, it’s sweet savory creamy fresh and satisfying ! I reallly hope you give it a try!!

Equipment

Ingredients
  

  • 1 cup quinoa
  • 2 cups veggie broth
  • 2 scoops spirulina powder
  • 1 can jackfruit drained and rinsed
  • 2 garlic cloves minced
  • 1 tsp ginger chopped finely
  • 1 tsp olive oil
  • 2 tbsp fireball basil powder or stock of choice
  • dash of cayenne pepper
  • 1 tbsp coconut sugar
  • 1 zucchini ribboned
  • 1-2 cups baby kale
  • 1 cup corn kernels

Salad Dressing Ingredients

  • ½ cup vegan mayo
  • 2 tbsp apple cider vinegar
  • salt n pepper to taste
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Instructions
 

  • In a pot bring your veggie broth to a boil. Add your quinoa and reduce heat. Cover and simmer until all the broth is absorbed. Remove from heat and let stand 5 mins. Remove lid. Fluff with a fork and stir in your spirulina. Set aside.
  • While the quinoa is cooking. Drain and rinse your jackfruit then pull apart the pieces. In a bowl add your jackfruit and basil flavoring (if you don’t have the flavoring you can sub for any spice mix you love) stir till thoroughly combined.
  • Heat a sauce pan and add your olive oil,ginger and garlic. Once browned slightly add your jackfruit. Cook till the spices are aromatic then add your coconut sugar and cook until the jackfruit colors slightly. Remove from heat.

Dressing

  • Add all ingredients to a bowl and whisk until combined.
  • Add all ingredients into you bowl and serve with that creamy dressing which is the perfect combo with that spicy sweet jackfruit.
