Farmers Market Veggie Bowl

I had the absolute pleasure of creating this beautiful bowl for my mates over at @gardein, and it turned out to be one of my favorite vegetarian recipes yet. I ADORE @gardein’s plant-based be’f, and it shines in this YUMMY BOWL. So if you’re ready to dive into a bowl of fresh, vibrant flavors straight from the farmers market than get your cutting board out and start chopping! LET’S EAT!!

Farmers Market Veggie Bowl Ingredients

  • Veggie Ground: I used Gardein’s plant-based be’f. It provides a hearty, protein-packed base for the bowl that can also be used as a meat replacement in other recipes.
  • Garlic: Adds a robust, aromatic flavor when sautéed with kale.
  • Kale: A nutrient-dense leafy green that wilts slightly when cooked, adding texture and vitamins.
  • Button Mushrooms: Sliced and sautéed to add a rich, earthy flavor and meaty texture.
  • Peas: A pop of sweetness and a good source of plant protein.
  • Zucchini: Adds a refreshing, crunchy element to the bowl.
  • Olive Oil: Used for sautéing the vegetables and enhancing their flavors.
  • Avocado: Adds creaminess and healthy fats.
  • Mixed Greens: Provides a fresh and crunchy base for the bowl.

Parsley Ranch Dressing Ingredients

  • Vegan Mayo: The creamy base for our dressing, offering richness without dairy.
  • Non-Dairy Milk: Thins the dressing to the perfect consistency, adding smoothness.
  • Apple Cider Vinegar: Adds tanginess and balances the richness of the mayo.
  • Crushed Garlic: Brings a bold, savory note to the dressing.
  • Onion Powder: Adds a subtle depth of flavor.
  • Paprika: Adds a hint of smokiness and color.
  • Salt and Pepper: To taste, ensuring the dressing is well-seasoned.
  • Fresh Parsley: Chopped and added for a burst of fresh, herbal flavor.

How to Make This Farmers Market Veggie Bowl

Start by chopping all your veggies. Heat a little olive oil in a pan and sauté the garlic and kale until the garlic is fragrant and the kale has wilted slightly. Once cooked, remove from the pan and set aside. Next, slice the mushrooms and add them to your pan with a touch of olive oil. Fry until slightly browned, then remove from the pan and set aside. Add your Gardein be’f to a pan, frozen, and cook on low heat without oil. Once cooked through, remove from heat and set aside.

Add all of the salad dressing ingredients to a bowl and whisk until thoroughly combined. To assemble the bowl, lay a bed of mixed greens in your bowl, then add all your prepared ingredients. Drizzle with the creamy parsley ranch dressing and enjoy your vibrant, nutritious Farmers Market Veggie Bowl!

While both bowls and salads are often packed with fresh ingredients, a bowl typically combines a variety of textures and flavors, often with a grain or protein base, and is usually served as a more substantial meal. Ingredients
  

  • cups of veggie ground like @gardein ‘s plant-based be’f
  • 2 cloves garlic
  • 2 handfuls kale
  • ½ punnet button mushrooms
  • ½ cup peas
  • 1 zucchini ribboned
  • olive oil
  • ½ an avocado
  • mixed greens

Parsley Ranch Dressing

  • cup vegan mayo
  • ¼-½ cup plant based milk
  • tsp apple cider vinegar
  • 3 cloves garlic crushed
  • 1 tsp onion powder
  • ¼ tsp paprika
  • salt and pepper to taste
  • handful fresh parsley chopped

Instructions
 

  • Chop all your veggies ready for cooking. Then heat a lil olive oil in a pan and sauté garlic and kale until garlic is fragrant and kale has wiled slightly. Once cooked remove from pan and set aside.
  • For the mushrooms, slice and add to your pan with a touch of olive oil. Fry until slightly brown, remove from pan and set aside.
  • ADD your GARDEIN be’f to a pan, frozen. And simply cook on a low heat. No oil needed. Once cooked through, remove from heat, ready for serving.
  • For the dressing, simply add all your ingredients into a bowl and whisk until thoroughly combined.
  • Lay a bed of mixed greens into your bowl then add all your prepared ingredients and serve with your beautiful homemade ranch! FARMERS MARKET DREAM!! ENJOY!!
