Hello, smoothie enthusiasts! Who ever thought carrot cake would make its grand breakfast debut in a smoothie bowl? Only at Claire Bear Bites, right? Every spoonful is a dance between the classic cakey flavors and the surprise twists we adore. It’s cake for breakfast, the Clairey way!

I mean, we’re not just talking about a regular carrot cake here; we’re diving into an immunity-boosting, high-protein breakfast delight. We’ve got the creaminess of bananas, the natural sweetness of mangoes, and the crunch of coconuts. But the game-changers? Mushroom immunity powder and frozen cauliflower. Sneaking in superfoods that amp up our health, without compromising on flavor, is pure genius!

The perfect set of ingredients for a happy morning!

  • FROZEN BANANA: The sweet creamy texture of banana not only tastes amazing and it is the perfect smoothie base. It’s an amazing breakfast choice. Loaded with potassium that helps the body regulate water and muscle function. It also gives you the perfect amount of energy to kick start your day. I am banana obsessed over here! 
  • FROZEN CARROT: Because you can’t have carrot cake ANYTHING without carrot! You can buy store bought frozen carrots or even prep your own. Smoothies are the ultimate vehicle for adding hidden veggies. These sweet carrots blend beautifully and add added vitamin A to the mix! 
  • FROZEN MANGO: Sweet, tropical and delicious. I love mango in smoothie bowls as it not only tastes amazing it’s texture stabilizes the smoothie for the perfect spoonable texture! 
  • FROZEN CAULIFLOWER: Adding frozen cauli to smoothies is such a great way to add veggies to your diet. It blends beautifully and you can’t taste it AT ALL! Perfect for picky eaters and kids! 
  • PLANT MILK: I used almond milk to bind my smoothie. You can use whatever plant milk you have on hand. For an even creamier texture. Coconut milk would be amazing too. 
  • MUSHROOM IMMUNITY POWDER: I’m all about adding in as many nutrients as I can into every meal/recipe I create. Mushroom immunity powder is an absolute staple in my house. I use bare organics.  Which has little to no flavor and a blend of mushrooms. They have proven to improve concentration. Help with inflammation in the body and reduce bloating. It’s a great addition to your diet! 
  • CINNAMON: The quintessential flavor in carrot cake! We definitely had to add cinnamon!!
  • NUTMEG: Along with cinnamon. Nutmeg in carrot cake is dreamy. It blends perfectly and makes this smoothie taste just like carrot cake! 
  • MEDJOOL DATE: This is optional if you like things on the sweeter side. You can omit it if you aren’t that sweet inclined 🙂 
  • SHREDDED COCONUT: With such a smooth texture we had to add a bit of a bite. Shredded coconut is the perfect texture break and if you’re like me you add coconut to carrot cake so major win! 
  • FRESH MANGO: Sweet juicy fresh mango is the perfect topping to go with the coconut. It adds a beautiful freshness to the recipe.

Carrot Cake Smoothie Bowl

My faviesttt cake in a smoothie bowl!? YES PLEASEEE!! This is one of my all time favorite recipes! And this lil beaut just so happens to be bangin for the bod and will make your lil heart smiley!! I love finding ways to sneak in veggies and this one slaysss for your health anddd taste buds!! All those familiar carrot cake flavors with a clairey twist. Let's get our cakey onnnn!!

Ingredients
  

Smoothie Ingredients

  • 2 frozen bananas
  • 1 cup frozen carrots
  • 1 cup frozen mango
  • ½ cup frozen cauliflower
  • ¾ cup plant based milk of your choice
  • 1 scoop mushroom immunity powder I used Bare Organics
  • ¼ tsp cinnamon
  • tsp nutmeg
  • 1 medjool date optional

Topping Ingredients

  • mango
  • coconut

Instructions
 

  • Start by chilling your serving bowl in the freezer. This keeps your smoothie from melting once you serve
  • Add all your ingredients into a high speed blender and blend until smooth and creamy! If it’s struggling to come together just add a lil extra plant milk 🙂
  • Spoon into your chilled bowl. Top with your mango and coconut and dive into this bowl of yum!! The best way to eat cake for brekky!!😎😋 ENJOY!
