Claire's vegan Sweet Corn Chowder blends summer's fresh corn with creamy coconut milk and hearty potatoes for a warm, comforting, and gluten-free bowl of goodness perfect for fall.

Hey there, my food-loving friends! 🌽🍂 Can you believe it? We’re on the cusp of that magical transition from the sunny days of summer to the cozy embrace of fall.  And you know what that means – it’s time to celebrate the changing seasons with a bowl of pure comfort and flavor!

Picture this: fresh, sweet pops of corn swimming in a creamy-rich broth, and tender Yukon gold potatoes that melt in your mouth. It’s the ultimate fusion of summer’s sweetness and fall’s heartwarming comfort – my Cozy Sweet Corn Chowder!

But this chowder is more than just a meal; it’s a symphony of flavors that dance on your taste buds, reminding you of the beauty in change. So, my dear foodies, grab your soup pots, bring your appetite, and let’s embark on this culinary journey that celebrates the essence of each season. 

What you Will Need

  • FRESH CORN: Moving from summer to fall is one of the best times of year. You can use the end of summer produce in cozy fall recipes! Fresh sweet corn is just magical in this chowder. If fresh isn’t available you can absolutely use frozen or canned 🙂 
  • COCONUT MILK: Rich and creamy coconut milk is the dreamiest vase to this vegan chowder. It doesn’t lose the richness of a dairy chowder and even adds some healthy fats! 
  • VEGETABLE BROTH: I used store bought organic veggie broth for this recipe. Quick and easy and adds depth to the chowder. 
  • POBLANO PEPPERS: I de-seeded and chopped these finely. There isn’t a lot of heat but you can omit if you prefer. They do however add a beautiful flavor and mild heat which is so lovely in the creamy broth! 
  • POTATOES: I used Yukon gold potatoes. You can also use baby potatoes or peeled russet. Just try to use a potato that holds together when cooking. The perfectly cooked potatoes in this recipe make it so cozy and hearty! 
  • GREENS MIX: The addition of greens is so fun! Adding nutrients and also an amazing texture in each bite. You could also use spinach or kale. 
  • VEGAN YOGURT: This adds the extra creaminess that boosts this chowder out of the park! Add extra for a creamier base. You could also use vegan sour cream!

Sauté and Soften

Begin this flavor-packed journey by grabbing your trusty soup pot. Heat up a splash of olive oil and toss in some minced garlic, diced poblano pepper, potatoes, and fresh sweet corn. Let them dance in the pot for about 7 minutes until those spuds start to soften and become your cozy chowder’s best friends. 

Add Liquids

Now, here comes the creamy dream team. Pour in the vegetable broth, followed by that luscious coconut milk. It’s time for the magic to really happen. Stir in some vegan yogurt to amp up the creaminess factor, and let everything simmer until those potatoes are perfectly tender. Can you smell the goodness yet? 

Finish with Greens

Just when you thought this chowder couldn’t get any better, we’re adding some beautiful greens to the mix. Turn off the heat, and gently fold in the crisp, refreshing greens. They not only bring an extra layer of flavor but also loads of nutrients and that fantastic bite we all crave.

Cozy Sweet Corn Chowder

Say hello to the ultimate celebration of summer meeting fall. My cozy, delicious, fresh and bright vegan corn chowder is everything we loved about summer marrying heartwarming fall perfection. Fresh sweet pops of corn in a creamy rich broth, melt in your mouth potatoes. This chowder is vegan, gluten free and so rich and cozy. So grab your soup pots and come to chowder heaven with me!

Cook Time 25 minutes

Servings 4

Ingredients
  

  • 1 container organic Romaine crisp mix
  • 1 tbsp olive oil
  • 1 medium white onion chopped
  • 3 garlic cloves minced
  • 1 poblano pepper seeded and diced (can also use 1 seeded jalapeno)
  • 3 cups diced yukon gold potatoes
  • cups fresh sweet corn
  • 1 can coconut milk
  • cups vegetarian broth
  • 2 tbsp vegan yogurt
  • tsp salt plus more to taste
  • Freshly ground black pepper

Instructions
 

  • In a large pot, add the olive oil, garlic, poblano pepper, potatoes and corn and sauté for 7 mins, until the potatoes begin to soften
  • Add your broth, coconut milk and stir
  • Next add the vegan yogurt and simmer until the potatoes are fully cooked.
  • Next turn off the heat, and stir through the beautiful greens.
  • Ladle into serving bowls, and serve with toasted crusty bread!
