I’ve got a delightful 5-minute plant-based breakfast that’s bound to become your morning ritual. This brekky is not just nourishing, it’s a celebration of vibrant, whole foods! Packed with lean plant protein, vitamins, minerals, and FLAVOR, it’s your ticket to a fantastic day ahead!

What you will need for your savory breakfast:

  • KALE: ok ok ok I get it. Ew kale- rabbit food. Yuck! Haha but TRUST ME!!! Massaged with olive oil and lemon juice is a kale game changer! It tenderizes the leafs and makes them so flavorful! Give it a try!!!
  • ZUCHINNI: one of the most underrated veggies! I just love zuchinni!! It’s literally a sponge that just soaks in any flavor you pair with it! 
  • EXTRA FIRM TOFU: please make sure you use EXTRA FIRM. The texture is essential in this bowl. It’s raw in here and is the most delicious ‘meaty’ texture addition. Plus it adds a protein wack! 
  • HEMP HEARTS: beautiful nutty flavor and texture and packed with healthy fats and protein! This will help fuel your day! 
  • AVOCADO: creamy and delicious. It brings together all the components of this breakfast so well! 
  • OLIVE OIL: don’t be scared of HEALTHY oil. It’s essential for a balanced diet and it also tenderizes the kale wonderfully 
  • LEMON JUICE: fresh bright and zingy. It pares so well with the creamy avocado and tenderizes the kale! 
  • GARLIC POWDER: perfect pantry staple and adds Instant flavor to the zuchinni and bowl as a whole!

5 Minute Savory Plant Based Breakfast

Got a spare 5 minutes? Let’s get our brekkie on!! Simple, nourishing, and delicious. This Brekky gives you no excuses not to start your day with beautiful Whole Foods to fuel your body. PACKED with lean plant protein vitamins, minerals and FLAVOR!

Equipment

  • frying pan

Ingredients
  

  • 2 cups kale
  • ½ zuchinni sliced, quartered
  • 8 oz extra firm tofu diced
  • 1 tbsp hemp
  • ½ avocado sliced
  • olive oil
  • squeeze fresh lemon juice
  • salt and pepper to taste
  • ¼ tsp garlic powder

Instructions
 

  • To a hot pan drizzle a little olive oil and add your zucchini, garlic powder and salt and pepper to taste. Sauté until slightly browned
  • While the zucchini is cooking, massage your kale with a dash of olive oil and lemon juice.
  • Dice your tofu. Extra firm needs little to no pressing.
  • Add your kale to a bowl, followed by the zucchini, tofu, half an avocado, sliced and top with hemp seeds.
