Wasabi Ramen Power Bowl

Ingredients

  • 1 jade pearl ramen block or any ramen you choose
  • 8 stalks asparagus chopped, quick blanched
  • ½ cup corn kernels
  • 6 oz tofu sliced into thin strips
  • ½ zucchini raw, sliced
  • 1 cup napa cabbage raw
  • ½ avocado
  • 2 tbsp coconut aminos
  • ½ tsp sesame oil
  • dash of Sriracha

Wasabi Dressing Ingredients

  • ½ cup vegan Mayo
  • 1 tsp wasabi
  • squeeze lemon juice
  • ½ tsp maple syrup
  • salt and pepper to taste
  • splash of water to loosen the mixture

Instructions
 

  • Press and slice tofu.
  • Combine coconut aminos, sesame oil and sriracha in a bowl. Mix well and add tofu. Cost thoroughly in the marinade and set aside.
  • Chop all veggies and set aside. Quick Blanch the asparagus.
  • Add tofu to an air fryer and cook at 375 until crispy and browned
  • Prepare ramen according to package instructions. Rinse and drain.
  • To make the wasabi dressing. Combine all ingredients and whisk thoroughly.
  • Add all ingredients into a bowl, top with half an avo and a dollop of wasabi dressing.
