Sweet Corn and Avocado Salad

The combination of textures and flavors will make your tastebuds do a happy dance! The sweet pops of corn, the ricey, but low carb option of hearts of palm rice and the creamy avocado are a match made in absolute yummy heaven. Paired with the lightest, brightest and zingy fresh dressing. This salad comes together so easily and is such a show stopper.

Ingredients
  

Salad Ingredients

  • 1 pack palmini hearts of palm rice
  • ½ cup sweet corn kernels
  • 3 celery stalks diced finely
  • ½ yellow bell pepper diced finely
  • ½ cup edamame shelled
  • celery leaves garnish
  • ½ of an avocado (for avocado rose) (how to make avocado rose linked above in blog)

Salad Dressing Ingredients

  • 1 clove of garlic crushed
  • 2 tbs olive oil
  • ¼ cup fresh lemon juice
  • salt and pepper to taste

Instructions
 

  • Prepare the dressing by simply whisking all ingredients in a bowl until well combined.
  • Prep all vegetables and set aside
  • Rinse and drain your palmini rice and add to a bowl along with the chopped celery, bell pepper, corn and edamame.
  • Drizzle over the desired amount of dressing
  • Serve in bowls, garnish with celery leaves and a beautiful avocado rose.
