Sweet Corn and Avocado Salad
The combination of textures and flavors will make your tastebuds do a happy dance! The sweet pops of corn, the ricey, but low carb option of hearts of palm rice and the creamy avocado are a match made in absolute yummy heaven. Paired with the lightest, brightest and zingy fresh dressing. This salad comes together so easily and is such a show stopper.

Salad Ingredients
- 1 pack palmini hearts of palm rice
- ½ cup sweet corn kernels
- 3 celery stalks diced finely
- ½ yellow bell pepper diced finely
- ½ cup edamame shelled
- celery leaves garnish
- ½ of an avocado (for avocado rose) (how to make avocado rose linked above in blog)
Salad Dressing Ingredients
- 1 clove of garlic crushed
- 2 tbs olive oil
- ¼ cup fresh lemon juice
- salt and pepper to taste
Prepare the dressing by simply whisking all ingredients in a bowl until well combined.
Prep all vegetables and set aside
Rinse and drain your palmini rice and add to a bowl along with the chopped celery, bell pepper, corn and edamame.
Drizzle over the desired amount of dressing
Serve in bowls, garnish with celery leaves and a beautiful avocado rose.
