A Springtime Celebration in Your Breakfast Bowl!

Hello, breakfast enthusiasts and flavor seekers! Today, I’m bringing you a breakfast experience that’s nothing short of magical – my Spring Lemon and Blueberry Overnight Oats. As the seasons change and spring fills the air with its lively spirit, there’s no better way to celebrate than with a breakfast that’s as colorful and uplifting as the season itself!

The Ingredients for these Dreamy Spring Time Blueberry Lemon Overnight Oats!

  • OATS: I used regular old fashioned oats. But you can use gf if preferred! Oats are such an amazing way to start your day. They keep you full and satisfied. Fuel you for the day. Contain protein and are heart healthy!! Jazzing them up is so fun! 
  • CHIA SEEDS: they bind overnight oats so well for the best texture. I used white chia but the regular is just the same. They contain plant protein and essential omega 3’s making them a perfect addition to your diet. And your oats! 
  • PLANT BASED YOGURT: I used vegan Greek yogurt. Any plant based yogurt will work. The Greek is extra thick and creamy which I love!
  • BLUEBERRIES: I used fresh and frozen wild blueberries as they contain extra micronutrients and vitamins.
  • FRESH LEMON: for brightness, pretty slices and zest! I promise that the combo of fresh lemon zest and sweet blueberries is mind blowing!!!
  • MACADAMIA NUT BUTTER: I chose macadamia nut butter for the creamy tropical bites it has. Almond butter can be subbed if you can’t get the Mac! 
  • PISTACHIOS: these provide a much needed CRUNCH! You could sub for macadamia nuts, cashews, almonds or even sunflower seeds! 
  • VIOLA FLOWERS: of purse these were in season when creating this recipe. Violas are completely EDIBLE! And really turn dishes into something special. If you happen to already have some they look so stunning. But of course are not essential at all! 

Now that we’ve met our star-studded cast of ingredients, it’s time to embark on the journey of creating this breakfast masterpiece. Prepare your mixing bowl, your appetite, and get ready for the most beautiful bowl you’ve ever made yourself for breakfast!

Oat and Chia Base

In a large mixing bowl, combine 1 cup of oats, 1 1/2 tablespoons of chia seeds, 3/4 cup of plant-based yogurt, half a mashed banana, 1/4 teaspoon of vanilla, 1 cup of frozen wild blueberries, the juice of half a lemon, the zest of half a lemon, and 3/4 cup of plant milk. These ingredients come together like old friends reuniting after a long winter, creating a symphony of flavors and textures that will dance on your taste buds.

Mix thoroughly to ensure that every oat is coated in this heavenly mixture. As you stir, you’ll notice the vibrant colors and the fresh aroma of lemon filling the air – it’s a preview of the delightful breakfast that awaits!

Overnight Magic

If you’re preparing multiple servings or want to have your breakfast ready to go for the next few days, now is the time to plan ahead. Transfer this luscious mixture into two airtight glass jars or containers. Seal them tightly and let them take a well-deserved rest in your refrigerator overnight.

This step is where the magic happens. As the oats, chia seeds, and fruits mingle with the creamy yogurt and zesty lemon, they form bonds of deliciousness. By morning, you’ll have a breakfast that’s not only convenient but bursting with flavor!

The Delicious Toppings

Here comes the fun part – the toppings that elevate this dish from a delightful breakfast to a work of art but are also totally customizable.

I opted to use macadamia coconut nut butter, a sprinkle of chopped pistachios for a satisfying crunch, a handful of fresh blueberries, and last but not least the lemon.

How to make your lemon real pretty

  1. Take a lemon and slice it into thin, elegant rounds.
  2. Make an incision from the middle going outward and then twist it to create a stunning lemon twist.

*These lemon slices not only enhance the presentation but also add a bright, citrusy zing to your oats!

Blueberry Lemon Overnight Oats

Spring has sprung!!! And I’m celebrating with the bright and beautiful combination of blueberry, lemon and the mouthwatering macadamia coconut nut butter, these flavors together, are absolute magic! This is the perfect spring Brekky and the best option for ready to go breakfasts you can keep in your fridge! (Simply double or TRIPLE the recipe if you’d like more servings prepped)

Equipment

  • jars or airtight containers

Ingredients
  

  • 1 cup oats
  • tbsp chia seeds
  • ¾ cup plant based yogurt
  • ½ of a banana mashed
  • ¼ tsp vanilla
  • 1 cup frozen wild blueberries
  • ½ of a lemons juice
  • zest of half a lemon
  • ¾ cup plant milk

Topping Ingredients

  • 2 tbsp macadamia coconut nut butter divided
  • 1-2 tbsp pistachios chopped
  • blueberries
  • lemon sliced
  • viola flowers optional and edible!!

Instructions
 

  • Combine oats, chia, yogurt, banana, blueberries, lemon juice, lemon zest and milk into a large bowl.
  • Mix thoroughly to combine.
  • If prepping for several servings transfer to 2 air tight glass jars/containers. And refrigerate overnight
  • In the morning add one of your servings into a bowl and top with the DELICIOUS Mac coconut butter, sliced lemon, pistachios, blueberries and violas for that beautiful spring flair.
