If there’s one thing that’s better than a colorful plate, it’s one that’s overflowing with taste, nutrition, and pure joy. Today, I’m sharing with you my all-time favorite: The Rainbow Satay Noodle Bowl. Trust me, it’s not just a treat for your eyes but an absolute carnival for your taste buds.

The Stars of this recipe are the following ingredients:

  • Forbidden Pad Thai Rice Noodles: While any noodle will cuddle up nicely with these ingredients, the deep hue of forbidden rice noodles not only adds a stunning visual but also brings in a unique flavor. Plus, they’re gluten-free, which is a win-win for many!

  • Zucchini Ribbons: Using raw zucchini, especially in this fun ribboned form, introduces a crisp, refreshing element to the mix. It’s light, healthy, and effortlessly ups the elegance of the dish.

Rainbow Satay Noodle Bowl

Out with the old in with the noodles!!! Hahaha happy Friday peeps! Let’s celebrate and eat the savory satay noodley RAINBOW!! Beautiful fresh crunchy veggies, ahhhmazing forbidden rice noodles and creamy umami peanut satay sauce! This baby has it all! LET'S RIDE THE RAINBOW all the way to yum town!!

Equipment

  • Saucepan

Ingredients
  

  • 8 oz forbidden rice pad Thai noodles
  • 1 zucchini ribboned
  • 1 cup peas
  • ½ yellow bell pepper cut into strips
  • 1 carrot ribboned
  • ½ red bell pepper cut into strips
  • baby spinach

Satay Peanut Sauce Ingredients

  • ½ cup salted creamy peanut butter
  • 1-2 tbsp gluten-free tamari
  • 1-2 tbsp maple syrup
  • 1 tsp chili garlic sauce optional
  • 2-3 tbsp lime juice
  • ¼ cup water to thin

Instructions
 

  • For the sauce, simply add all ingredients and whisk to combine. Add water to thin to desired consistency. Then set aside.
  • Prepare all your veggies ready for serving and cook your noodles according to package instructions.
  • Add your spinach to your bowl(s) and then top with all your prepared yummies. Serve with that creamy delicious peanut sauce and dive into tasty rainbow heaven!! SAVE this beauty and add it to that summer dinny/lunch menu. It’s such a winner!!
