Quinoa and Cauli Crunch Bowl

What you will need to make this Cauli Crunch Bowl:

  • QUINOA: One of the most delicious and versatile grains. Quinoa is not only a superfood, rich in protein and iron. It also absorbs any and all flavor you add to it making this an amazing base for a salad! 
  • VEGETABLE BROTH: cooking quinoa In vegetable broth instantly flavors the entire dish. The quinoa will take on all of the rich a beautiful tastes of the broth. I used an organic vegetable stick cube. Made to packet directions. They are readily and easily available everywhere and ofcourse you can always make your own! 
  • MUSHROOM IMMUNITY POWDER: this is optional. But if youve noticed in my recipes. I am always trying to find ways to add nutritional value to each meal. Incorporating extra ingredients where possible to lift each recipe from a health standpoint. Adding mushroom immunity powder to this dish does not affect flavor at all and is a great way to boost your immunity, fight inflammation and improve digestion while simply enjoying your lunch! I love bare organics. But there are many on the market that also have all the great benefits. 
  • PURPLE CAULIFLOWER: I’m using two tries of cauli in this recipe. The purple cauliflower is one of the most beautiful veggies out there. Beautiful pastel color makes this whole dish pop. If you can’t get your hands on purple cauli. You can absolutely use regular cauliflower 
  • YELLOW CAULIFLOWER: again. I always find it so fun discovering the different kinds and types that are out there of my favorite veggies. I found an amazing yellow hued cauli and fell in love! So many of my recipes are created when I discover new a delicious produce. Sub for normal cauliflower 
  • FRESH PINEAPPLE: I am a hugeee cheerleader for fruit in savory dishes. The sweet bright and acidic notes from fresh pineapple is absolutely perfect. If you’re not a pineapple fan. You could sub for apple or omit completely 
  • PEAS: sweet beautiful pops of peas make this dish so vibrant and every bite perfectly balance. You could always sub for corn KERNALS I used frozen peas which I simple thawed under warm water before using. 
  • PUMPKIN SEEDS: if you’ve noticed in my recipes. I am ALL about texture. Pumpkin seeds are just the most magical crunch in this dish. While also adding healthy fats, iron and protein. 
  • BASIL: the floral notes of fresh basil Marry so well into this flavorful dish. You could sub for dill or parsley 
  • AVOCADO: creamy delicious avocado! Avo is such a great and nutritious way to add creaminess to a dish without a heavy cream filled dressing. Full of healthy fats. It brings everything together. 

Cook the Quinoa

Cook the quinoa according to the package instructions, but substitute water with vegetable broth and add mushroom immunity powder. Once cooked, fluff with a fork and set aside.

Prepare the Dressing

In a mixing bowl, combine extra virgin olive oil, crushed garlic, finely chopped basil, lemon juice, salt, and pepper. Whisk until all the ingredients are thoroughly combined. Set the dressing aside.

Assemble the Bowl

In a large mixing bowl, combine the cooked quinoa, finely chopped purple and yellow cauliflower, diced fresh pineapple, peas, pumpkin seeds, and torn fresh basil leaves. Drizzle the prepared dressing over the quinoa and veggie mixture. Toss well to ensure everything is coated with the tangy and bright dressing. Spoon the vibrant mixture into serving bowls, marveling at the colorful array of textures and flavors.

Add the Finishing Touch

Quinoa and Cauli Crunch Bowl

WHAM BAM Thankyou ma’am!! Holy texture gasms I am soooo proud of this hearty plantbased bowl of yummmmers!!! Warm and cold, crunchy and soft, sweet and savory. This bowl will satisfy you lil taste buds and nourish that bod!! Packed with natural superfoods, fiber rich veggies and protein packed quinoa. The tangy and bright dressing makes this salad so perfect for our door gatherings or quick meals at home.

Ingredients
  

Bowl Ingredients

  • ¼ head purple cauli chopped finely
  • ¼ head yellow cauli chopped finely
  • ¾ cup fresh pineapple diced
  • ¾ cup peas
  • 1 cup quinoa
  • 2 cups veggie broth
  • 2 scoops mushroom immunity powder
  • pumpkin seeds
  • fresh basil
  • avocado for serving

Dressing Ingredients

  • cup extra virgin olive oil
  • 1 garlic clove crushed
  • 1 tbs basil finely chopped
  • 4 tbs lemon juice
  • salt and pepper to taste

Instructions
 

  • VERYYY simply cook your quinoa according to package instructions and sub the water for veggie broth and add your mushroom powder.
  • Once cooked. Let it stand and fluff with a fork before using.
  • FOR the dressing, add all ingredients into a bowl and whisk until thoroughly combined and set aside.
  • TO a large bowl, add your quinoa along with all your other ingredients. Drizzle with enough dressing to coat and spoon into your serving bowl(s) then top with that beautiful creamy avocado for the most satisfying lil lunchy. This also makes a great side!! Enjoy my peeps!!!
